Pumpkin pie, of course!
Boiled Peanuts: How To?
How long you simmer is up to your personal taste and the temperament of the peanuts, but usually 4 hours is as long as I boil them. I posted my recipe here: http://macandcheesereview.blogspot.com/2006/12/boiled-peanuts.html
If you're not in the South where raw or 'green' peanuts can be found in any Piggly Wiggly, look for them in Asian Markets. And, you put roasted peanuts in a bottle of Coke, not boiled peanuts, but nothings stopping you from putting boiled peanuts in Coke, except that they're so good that you wouldn't dare drop them in Coke.

Aw, have to pick just one! I'd surely cry if there weren't any sweet potato souffle on the table.

When sick, Mom would let me drink un-gelled Jell-o like it was Kool-Aid. Don't ask why I didn't just drink Kool-Aid, but it was very sweet of her to indulge.
Serious Heat: Create Your Own Spice Blends
Oh, lord, I miss the Dekalb International Farmer's Market and their cheap, cheap spices! It's truly a must-do if you're ever in Atlanta.

Already a vegetarian, and pretty much "vegan until 6," so I'd have to say not much change, but I do agree with his eating philosophy.

What to Do with Sunchoke?
Oh, my absolute favorite way to eat sunchokes (or Jerusalem artichokes, as I call them) is in relish form. It may be a little more labor than you're willing, but it is so worth it. I posted a recipe here:
http://macandcheesereview.blogspot.com/2007/03/artichoke-relish.html
Otherwise, I like them sliced thinly and eaten on a salad of fresh greens. Don't waste your time peeling them.

Trader Joe's for basics. Their prepackaged vegetables are a turnoff, though.

I have made my great grandmother's carrot and zucchini o-shaped loaf for my in-laws for the past three years. I surround the loaf with and put in the middle tons of roasted broccoli - definitely a crowd pleaser, as it goes fantastic with the turkey and mashed potatoes and all the other classic sides!
