Boiled Peanuts: How To?

How long you simmer is up to your personal taste and the temperament of the peanuts, but usually 4 hours is as long as I boil them. I posted my recipe here: http://macandcheesereview.blogspot.com/2006/12/boiled-peanuts.html

If you're not in the South where raw or 'green' peanuts can be found in any Piggly Wiggly, look for them in Asian Markets. And, you put roasted peanuts in a bottle of Coke, not boiled peanuts, but nothings stopping you from putting boiled peanuts in Coke, except that they're so good that you wouldn't dare drop them in Coke.

What to Do with Sunchoke?

Oh, my absolute favorite way to eat sunchokes (or Jerusalem artichokes, as I call them) is in relish form. It may be a little more labor than you're willing, but it is so worth it. I posted a recipe here:

Otherwise, I like them sliced thinly and eaten on a salad of fresh greens. Don't waste your time peeling them.

Thanksgiving wouldn't feel right without a chunky, moist dressing (or stuffing, though I'm taking Alton's advice to heart and keeping it out of my turkey this year). But I've also a particular fondness for all the orange Thanksgiving sides -- caramelized yam, pumpkin purees, fleshy marrows. Those Squash Half Moons with Butter, Sesame, and Salt sound like heaven.
