I'm not sure if anyone outside of Canada knows Micheal Smith? He's The Inn Chef, the Chef at Large and the Chef at Home on Food Network Canada. A couple of years ago there were fantasy gifts in the Sears Wishbook, and one of them was to have Michael Smith come to your home and make dinner for you and your family/friends. If it didn't cost thousands of dollars, that would have been on my wish list!
I also concur with others that Alton Brown would be a great pick, because his company would be as enjoyable as the food!

Oh. I forgot to mention Julia Child. What a fantastic lady, even at her most annoying.

Marcella Hazan - hands down. Even after all these years, I still think her Essentials of Classic Italian Cooking is the single best cookbook I have ever owned. I have a bunch of her stuff, but that's my all-time go-to book.

Sounds weird, but a collaboration between Deborah Madison and Daniel Boulud? Something rich and luxe, but vegetarian and fresh. Maybe you'd end up with Alice Waters if you combined them, I don't know.

Marcus Samuelsson or Bradley Ogden. The first for his bright deep tastes, the second for his singing intense flavors. Actually a duet by the two of them would be out of this world.

After having an amazing meal at Frontera Grill on a recent trip to Chicago, I'd have to say Rick Bayless. It's food I can't get anywhere in my "neck of the woods".
