I love Kettle chips! What I'm currently obsessed with are these local(Bombay) potato chips. They are pretty thick, crisp and almost cardboard like, but in the best possible way. I believe the the potatoes are first cooked with alum, and that helps attain the texture. I must experiment at home with it.
