Alton Brown's diet
I think Alton's diet goes along the same theme as others like Mark Bittman...Less processed foods, more whole grains, little alcohol etc. Not a big fan of sardines, but to each his own. Have been doing the smoothies that he did on the episode and loving that.
Befriending Chefs/Restaurant Staff
Chefs are not at all creeped out if you say something like "hey, I noticed you burned yourself in service a couple nights ago...how's it healing." ;-)
They work long hard hours and, from what I have seen, all have an immense passion for what they are doing at Alinea...however, speaking as a former cook, they do like to have a few drinks after service...you may want to visit their local haunts strike up a conversation there....Or, a fun treat of sending the kitchen a basket of candy on Halloween as a new neighbor.

Worked at a restaurant and the chef de cuisine would go through the coolers and our mise en place and find items that were "not at their peak" and throw it on our workstations to come up with something. Most of the time, it would go into a hearty pasta sauce or stir fry. My favorite meals came when we had left over pizza dough (from lunch service) and would make it into grilled pizzas. Also, we would have skirt steak tacos (with a little Sriracha to give it a little kick).
