How to Make Old Fashioned Burgers on 'America's Test Kitchen' with Kenji
Did it - most amazing burgers I've ever had! See mine here: http://ifyoucanstomachit.com/2010/07/03/old-fashioned-cheeseburgers/
Grilled: Spike Mendelsohn, Chef at Good Stuff Eatery in D.C.
Excellent restaurant (a little pricey for a burger joint). Must have: Toasted Marshmallow Shake - http://ifyoucanstomachit.com/2010/05/26/washington-d-c-eats/
What's the Best U.S. City for Burgers?
Great question. Here's your answer - Minneapolis, MN. Why? First you have one of the more diverse restaurant experiences in the U.S. because of the vast diversity of the city. Second, you have a variety of choices - regional favorites like Culver's, Red Robin and even Five Guys. We also have many sports eateries with such a great sporting history (I didn't say successful history!).

85/15 is good - although I like to grind (food processor) my own often and look for a good even distribution of fat in the meat - not really sure on the ratio.
