I love having any kind of roasted squash or sweet potato; just sliced and tossed with olive oil, sea salt, pepper and whatever dried herbs I have around. Always delicious and comforting and dead easy to make.
Cook the Book: 'The Sweet Potato Lover's Cookbook'
Sweet potatoes are a favorite of mine (I'll probably eat them in any shape or form, except maybe the version served during thanksgiving topped with marshmallows), but my favorite is simply roasted, with olive oil, spices and lime juice on top.
