Do You Take Your Knives on Vacation?

For our last several vacations, we have rented a cabin or timeshare and the knives in rentals are usually horrible, so I have learned to bring my chef's knife and bread knife. We also usually bring some good olive oil, and enough coffee for the first day or two until we can get to a grocery store. When we're doing the family reunion thing we bring a big soup pot or 2 since the pans in the condos are seldom large enough. In a couple weeks though, we're going on vacation and staying in a bed and breakfast for several days, so we'll be eating out all meals (except breakfast of course). Never done that before, and looking forward to trying some wonderful local restaurants.

what is the best cocoa powder?

I almost always use a combination of King Arthur Flour's Black Cocoa and Double Dutch Dark cocoa, usually 1/2 and 1/2. It makes the baked goods look almost black in color, and as Lemonfair mentioned, if it's darker in color it seems to be "chocolatier".

I would also recommend the Great Dane Pub. I had a delicious grass-fed burger there. Of course, I can't compare it to anywhere else in Madison as I haven't eaten anywhere else there (was just there for the day).

A couple years ago we were having Christmas Eve dinner at our house after church. I put the ingredients in the bread machine to run while we were gone. During the middle of the service, I suddenly realized (obviously I wasn't focusing on the music or message going on at the time) I had forgotten to put the yeast in. When we got home, I tried to add it in, knead it in evenly, and hoped for the best. It was not my best moment.

What kind of chocolate do you prefer?

I prefer good quality dark chocolate (70-75%) for both baking and just eating out of hand. Just plain chocolate, no other flavorings. I enjoy good white chocolate occasionally in baked goods, as long as it's with some good dark chocolate too.

Weekend Cook and Tell Round Up: Adventurous Vegetables

Wow, I don't know where all of you live, but here in central Iowa, I don't think I've ever seen any of the above mentioned varieties of vegetables or fruit. We have three regional grocery store chains, and Walmart of course, and they all just carry the usual common vegetables. I guess I need to try some of the local ethnic markets and see what they have.

Both triumph and disaster this weekend. I made some white chocolate cherry shortbread cookies. Half the cookie is dipped in melted white chocolate. Well for some reason, the chocolate wouldn't melt right and looked a sickly yellow color. I tried it two more times before having any success. They did turn our very pretty and festive looking, and delicious.

Critic-Turned-Cook Steels Herself for Canning Season with Canning Across America

I haven't canned for several years. I used to have a large enough garden to can tomatoes, but have since downsized and don't get enough tomatoes at one time to can. I have been thinking about getting a case (or however they come) at the farmer's market to do that, since we use tomatoes and tomato sauce so frequently. The other problem I have storage room. Haven't figured that one out yet.

Eating ham always makes me think of my dad, who passed away 9 nine years ago. He ate ham sandwiches every single day. I like them pretty much the way he did - plain with just some swiss cheese, and a little butter on the bread.
