Hands down the best stuffed/deep dish in the city. The Art's Special, with sausage, green peppers, mushrooms, and onions, is probably responsible for more post-wedding weight gain that I'd like to admit.

The beer list is at least 10 pages long, but it offers a lot of great tidbits of information on the various beers they have. You didn't mention that they have cask ales, where a small keg is filled with beer and given time to carbonate naturally and then a tap or spout is manually hammer to pour the beer.
You did miss out on a fantastic burger, but everything else you said is spot on.

The Nasty Bits: Suet
I'd also like to know if you've ever worked with lamb suet. I received about a pound of it in my CSA this year and it has been sitting in my freezer. Maybe I can use it for savory pie crusts? Savory biscuits?
Equipment: What Makes the Best Steak Knives?
I went to a dinner party where the steak knives were indeed the Laguiole knives. I do have to say that while they did cut through our beef luxuriously smoothly, it did feel like I was wielding museum-quality tableware that was to be looked at, not used. The shape is a little weird, and it is deceptively light, which made for an awkward feeling in the hand. I'll stick to the Henckels serrated knives in my house.
Spice Hunting: Grains of Paradise
Alton Brown's lentil soup recipe uses grains of paradise and they elevated the dish from everyday ho-hum to wow I can't believe the complexity of this!
I believe the first time I made the trip to the Spice House in Evanston (suburb just north of Chicago) was to procure grains of paradise. I'm glad that I went there, as it's now one of my favorite culinary places to go.
Marcus Samuelsson Masters Classic America at Marc Burger in Chicago
I generally prefer going to Frontera Fresco when I'm in that food court, but I have strayed to Marc Burger a few times. While I agree with your evaluation of the fries and shake, each time I've found the burger patties to be woefully underseasoned. Combined with the too-spongy bread and waaay past medium doneness, I remain underwhelmed.
Stuffed Pizza Mediocrity at Carmen's is Still More Than a Little Satisfying
That's too bad about Carmen's. The first time I had it was more than 10 years ago, and I thought it was really good. I had it again 5 years ago and it was just OK. I see that another 5 years has brought it down to mediocre.
Doesn't really matter these days...Art of Pizza is now my main go to for stuffed pizza.
How Long Would You Wait in Line for Food?
Weirdly enough, what is it about Chicago in that people are willing to wait hours for food? Hot Doug's, Kuma's, Frontera, etc, all have wait times >1.5 hours on a GOOD day.
In what other cities does this irrational waiting for food occur? San Fran and New York, obviously. Anywhere else?
How Long Would You Wait in Line for Food?
A friend was in from out of town this weekend and wanted to go to Hot Doug's. We ended up waiting about 2 hours for some encased meat and duck fat fries. It was better than I had remembered it to be.
Last year I waited with my brother from out-of-town about 2 hours to eat a heavy-metal-band-named-burger at Kuma's Corner.
That's a lot of waiting for food I've done in my life.

@Kumiko - Jacques Torres actually makes a 60% cocoa chip, their house brand. That's a lower cacao percentage than the Scharffen Berger you tested. The Jacques Torres store in lower west Manhattan has them.
They also have a 72% cocoa chip - I'd definitely like to see that at a bittersweet tasting!

I'm surprised that while a Jacques Torres-inspired recipe was used, you didn't test the Jacques Torres chocolate! Ever since I read about his 36-hour cookie recipe in the NYTimes I was curious about his chocolate, and on a business trip to NYC I had the chance to visit his store in lower Manhattan and get some. His store isn't that far from the SE office, is it?
Anyway, you can order his chocolate online, too.
Needless to say, I use only Jacques Torres chocolate now.

...the problem is that the meals often fall well short of Blackbird-quality food, and the people can range from some of the most interesting to the most dull. If I'm doing to dish out $200 for a meal, I'd like to think that I'm going to go home pleased, not disappointed.
The problem is that the underground dinners are proliferating and are hyping what can possibly be a ho-hum experience all around.

Just tried a recipe from an Australian cookbook for leg of lamb roasted directly on the oven grate, at high heat. Yum.

I love this place - the people who work there are always so nice and helpful.
I also like that the "torpedo-shaped body warmer" bread can be bought 3 for $1.
