Bacon was too sweet. A lot of work for a BLT. BUT the tomato jam is wonderful. I have found several uses already for this wonderful, tasty jam.
This is an amazing recipe. It is delicious, especially now that the corn is fresh and in the green market. I used spicy jalapeno (there are various degrees of spiciness to jalapenos. I also used a heaping teaspoon of Penzie's medium hot chili. It was amazing. Next time I will double the recipe. Thank you so much.
I cannot comment about these restaurants or dishes, but I am shocked that you did not include anything from Arun's. Arun's is considered by many to be the finest Thai restaurant in the country, if not the world. Granted, they are price fixed and do not offer individual dishes, but their food is incomparable. I only wish they would open in New York.
I have been looking for a good Philadelphia hoagie. DeFontes has great hoagie-like sandwiches, but not the real thing - great Italian deli meats, cheese, shredded lettuce, onions, oil and vinegar and hot peppers all on a great roll. Anyone have any thoughts?

This recipe is awesome. A lot of work, but if you like spice, it is well worth the effort for a great change of pace. The chipotle mayo is good on other foods, so, double the mayo recipe and keep it around for other things. Makes a mean topping on a BLT.
