  • Favorite foods: By far my favorite foods are comfort foods. I love soups, stews and dishes I create from what's available in my pantry and refrigerator. Also, seafood: shellfish, fish. I love certain cuts of beef. Homemade pies. Anything with pasta or rice.
  • Last bite on earth: My last bite on earth would have to be either a hearty homemade soup or something with pasta!

Curios: Chef Colucci, but the restaurant is Collichio and Sons? Wouldn't Chef Tom Collichio be annoyed or is this the same celebrity chef who owns Craft Restaurants? Clarification, please.

I would serve it with a potato and cheese gratin made with Gruyere cheese and cream, fresh corn on the cob slathered with butter and black pepper. For dessert a big slab of strawberry/rhubarb pie.

And in addition to my comment above - we can still send seeds to these countries. I don't mean to sound heartless, but why, why can't our government run efficiently and do something for our own? There are too many officials that have absolutely zero common sense.

Could we start to feed our own starving children in America?? There is an epidemic in the United States of our own citizens going hungry. Hey, let overseas governments pay OUR people to show them how to farm and grow food. Let our farmers make the money they so well deserve.

From Behind the Bar: On Drinking Alone

I like this article - the picture helps. I am reminded of my bartender days at my parents tavern in the small village of Chester, CT - where everybody knew your name. It was built in the 1800's. It was not really all that dark and my mother and step dad strove to keep it clean. It was your typical neighborhood tavern and to this day, there are many people that remember when my parents owned it, and the simple food that was served at lunch. Many of the patrons have passed and there are those of us among the living that laugh and have fond remembrances. Maybe you could bring the bar to life again - you never know.

Leftover Chops

If I were you (and depending on the spices on the chops): I would saute up some sweet onions until caramelized, add in some apple cider and chicken broth and simmer together. Then add in the chops and simmer on low heat to let the already cooked chops reabsorb some moisture. Serve over creamy mashed potato.
