All-You-Can-Eat Restaurants: Great Deal, Or Bad Policy?

I don't think it's a bad policy as much as it teases our urge to eat vast amounts of food. From an anthropological standpoint, the large quantity of food in human societies is relatively new. Naturally, because our bodies are used to eating whatever and whenever we can just to survive, knowing that one could eat "as much as he/she wants" would send one's anticipation into a flurry. My biggest problem with all you can eat places is the lack of food quality. Other than that, just be conscious about how much you consume.

The 10 Worst Food Trends? Really?

The way I see it, one person's "worst trends" is another person's preference. Needless to say, this article by the CT was unnecessary and, as Timothyrows states, only reason of existence is to provoke people. The great thing about these lists is that, unless blatantly misinformed, you can't really be wrong. For example, they could have just have easily flipped most of their worst trends, and they still would have made sense. Instead of being sick of molecular gastronomy (which, just like Rocco, is way too over hated), what if they said they were sick of all these "down home, simplistic" places? Sure, I can see their point - just as I can for molecular gastronomy. Regardless, a great point of view, Michael, and thank you for setting the record straight on some commonly held beliefs of molecular gastronomy, celebrity chefs, and, most of all...the fried onion blossom!

So, when you deep fry a hamburger like that, is it so juicy because of the oil, or does the crust somehow prevent the juices from spilling out? Or is it a combination of the 2?

The burgers look really good, but I still have yet to be sold on ciabatta as a viable burger vehicle. I often find it to be too hard and crumbly, and (yes, this sounds weird) a tad too bready.

'Are You a Menu Whisperer?': Take 2

Like you, Adam, I never order chicken at a restaurant unless I am going to a place known for their chicken - usually at fried chicken places. The biggest thing anyone can do to get the most out of a menu is to do research ahead of time. Also, in my experience, daily specials turn out to be better than most menu items. I know some people are of the opinion that daily specials are nothing more than older items they have to get rid of. But, even if that is true, I have found specials to be more creative and appealing than standard menu items.

From Serious Eats

Are You a Menu Whisperer?

If I'm at a good place, I always have to order at least 3 courses (app, entree, dessert) and sometimes 4 at certain places - such as Italian (app, pasta, entree, dessert). I'm usually not one of those people who can go to a nice place and order just a salad. However, my big thing is dessert. I always have to sneak it in there, and I just can't call my meal complete until I have something sweet. So, when we are all done with out entrees, and everyone leans back and says how full they are, I do the same. But, in the back of my mind, I'm thinking about dessert, and when the waiter comes to ask if we are hungry for dessert, everyone at the table does that thing where they slightly smile and shake their heads while patting their stomach. But, I slyly will ask to see what they have to offer. Because...you know...just to see what they have >:)

AHT Poll: What's Your Favorite Burger Size?

Well, here's the question. If you choose slider size (2-3 oz) for the size you prefer, but you eat 3 or 4 of them at a time, should your size really be 6-8 oz? Or, is this just if you were to have 1 burger at a meal.

Not sure if I understand the point of the peace sign version, unless you're trying to bake less pie (which might actually be a really good idea if you aren't having many people over), because then you'd still have to eat three slices of pie to get all three flavors. It's cute though.

I've had pecan-pumpkin pie before, and I thought that was superior to either of its "parents". Basically the gooey custard stuff in the pecan pie was replaced with pumpkin pie filling. Therefore, it retained the best part of the pecan pie (the pecan top) while the pumpkin seemed to benefit from the shelter (I'm one of those people who doesn't like the skin on the pudding).

Interesting that pumpkins and apples don't seem to play well together. I wouldn't have expected that.

Thanks for the comments, everyone. One thing that I don't know if I made clear in the writeup is that this construction for a pie is ideal for crust-lovers: you can get a full side of crust in addition to the bottom and the back!

Jennywren: I think that each of these pie fillings can stand on its own if you prefer to have three separate pies, but I think that some weird reaction happened when they baked together, and each got a little aromatic infusion from the other flavors which was actually quite nice!

Like the gold rush days of old, the persons that really did well were the merchants that sold supplies to the gold miners. It's probably the same for the Commissary Owners too. I do wish them well, as the restaurant business is a business that you don't own, "Owns You"

Local Santa Barbaraian here, chiming in. Great concept, great people but unfortunately that ciabatta "bun" really makes for a lack luster burger experience. I hope one day they will get one of the local bakeries to produce an legitimate burger bun as the rest of it is pretty darn good (if ordered med-rare). They also offer some of the better onion rings in town and fried pickles which are hard to come by in these parts.

All-You-Can-Eat Restaurants: Great Deal, Or Bad Policy?

The last time I was in Israel I stayed at a hotel that offered a breakfast buffet. The food was nothing less than amazing. They had cheeses and spreads from all over the middle east, a large assortment of fresh baked bread, familiar and exotic fresh fruit, and the most delicious yogurts I can remember having. It was very different from the breakfast buffets I have been to here in the US (less animal fat, less protein, less fried potatoes, less sweetened simple starches). In any case, most of us at that hotel ate smaller portions and seemed to be just as satisfied since the food was so fresh and tasty.

My Baby Blues BBQ in West Hollywood

So, for the record, I have never met or corresponded with Damon Gambuto (but, I would love to!). Also, for the record, I had Baby Blues delivered a few weeks ago, and had an extra-ordinary experience - story to follow.

To all the folks who are upset that Damon did not review the BBQ at Baby Blues, from what I can tell Damon Gambuto is a Los Angeles based burger correspondent, and he is great at what he does. Sometimes BBQ joints can offer up a good burger. In fact, Damon recently reviewed three burgers at Zeke's Smokehouse, which is directly across the street from Baby Blues. It is a great write up, and you can search for it on this site.

I went to Zeke's Smokehouse last night based on Damon's review and I loved it, and commented earlier today on that piece - thanking him, because the burger was so tasty. Damon gave baby Blues the same shot, and didn't love the burger. Oh, well. Get over it. At least he was brave enough to give that combination of flavors a fair shake.

BTW - I once had a a grilled veal chop topped with melted brie and lingonberries that was exquisite. Perhaps the burger would shine if the blue cheese and bacon stood out more and the sauce had whole berries rather than being more of a pureed sauce. It would probably require arugula to balance the sweet, salty and pungent with some peppery goodness. But, as a purist, I would still prefer a good, quality burger without all the hoopla and dressy fanfare. That's just how I roll.

I am assuming Lincolnberry is an Ebonics-esque play on lingonberry. If you are truly curious, give Baby Blues a call.

My experience at Baby Blues? My husband and I wanted beef ribs, and when I asked the gal on the phone how many came with the order she replied, "one - it's like a big steak." We decided to give it a shot, and each ordered one, which came with a choice of two sides. I opted for collards and mashed potatoes, hubby had corn and cole slaw. The sides were delish, but one of the ribs was burnt and less than half the size of the other rib.

I let my honey have the good rib and insisted he eat it while I called, because I am sweet like that (and we had just moved into our new place and he had been doing hard physical labor and desperately needed the fortification). The hostess got the manager who apologized profusely and asked if I wanted another rib. I did. Forty minutes later, the manager showed up at the door and told my hubz he cooked it himself. Maybe it was my sultry phone-sex voice, but I'd like to think it was solid dedication. Anyways, it was nice. A chuck blade, essentially. It didn't rock my socks off, but it was a good chuck rib weighing in at 16 ounces or more, and it was properly (lovingly?) cooked. The sauce was not my favorite, as it was a bit sweet and overly tart with vinegar for a tomato based sauce, and the XXX sauce was a bit salsa-like for my taste. The service, on the other hand, made a strong, favorable impression.

Thanks for the well-written review, Damon. As I left Zeke's last night, I glanced across the street and wondered if Baby Blues had a decent burger. Now I know what to expect.

Maack out.
