Cook the Book: The Serious Eats Chocolate Lover's Library

From the Williams-Sonoma Cookies cookbook I received as a wedding gift, one of my favorite cookies and certainly my favorite use of chocolate:

Chocolate Peanut Butter Sandwiches

3/4 cup butter
3/4 cup sugar
2 eggs
1 tsp vanilla
1/2 cup flour
1/2 cup cocoa
1/4 tsp baking powder
1/4 tsp baking soda
1/8 tsp salt

Filling:
4 TBL butter
1/2 cup powdered sugar
1/2 cup creamy peanut butter
1/2 tsp vanilla

Cream the butter until fluffy. Add sugar and beat thoroughly. Blend in eggs and vanilla. Sift together flour, cocoa, baking powder, baking soda, salt. Add to butter mixture, stir until just blended. Chill dough 2 hours.
Shape dough into balls (3/4 inch) and place on greased cookie sheets. Flatten each slightly. Bake at 350*F until firm, 10-12 min. Allow cookies to cool completely. Make filling: Combine butter, powdered sugar, peanut butter, and vanilla, beating until smooth. Cool until required. Make sandwiches of the cookies and filling, about 1 1/2 tsp filling per cookie. Store in a cool place.
Makes about 3 dozen cookies.

Now I'm thinking about them, but it's way too late to begin baking... Woe!
