"Easy" cinnamon pecan rolls?

Sprinkle a mixture of cinnamon, brown sugar and softened butter -- add chopped nuts if you like -- over canned crescent roll dough (don't separate the triangles, just roll the whole sheet flat). Roll, slice, bake (350 until they're done) and glaze (mix powdered sugar with milk until it's the right consistency). These mini rolls are cute and you can eat a ton of them.
The monkey bread suggestion is a great one, too, since you can assemble the night before.

I grew up on a wheat farm in the Oklahoma panhandle. One winter we were snowed in for a week without power. We slept downstairs and ran our floor furnace -- a grate on the floor with a gas heater underneath -- non stop. One day in a fit of cabin fever craziness I stirred up a batch of cookie dough and placed the cookie sheet placed on the furnace grate. It worked great and the aroma of baking cookies was a real morale booster!

Great dessert to bring to work?

Chocolate mousse! If you buy pasturized eggs (or don't worry about raw eggs) you can whip it up without any heat at all. Well, you need a microwave to melt the chocolate.

Mrs. B's in Austin, Texas serves up fabulous Sweet Potato Pecan pie. Mmmmmmm...

Sweet Potato Pecan Pie

Sweet potato layer
1 cup mashed sweet potato (from a can or make your own)
2 Tbsp. granulated sugar
1/4 cup brown sugar
1 small egg or 1/2 large
1 Tbsp. butter, melted
1 Tbsp. heavy cream
1 Tbsp. vanilla
1/4 tsp. cinnamon
1/8 tsp. each: nutmeg, allspice, salt

Pecan layer
3/4 cup dark corn syrup
3/4 cup granulated sugar
1 1/2 Tbsp. butter, melted
2 tsp. vanilla
2 eggs
1/8 tsp. salt
1/4 tsp. cinnamon
3/4 cup chopped pecans

In a food processor, combine the mashed sweet potato with sugars, eggs, butter, cream, vanilla and spices. Blend until smooth. Spread evenly in bottom of unbaked pie shell.
In a bowl with a whisk, combine dark corn syrup, sugar and melted butter. Add vanilla, eggs, salt and cinnamon. Stir in pecans last and pour on top of the sweet potato layer. Bake in 325-degree oven for 1 hour and 15 minutes to 1 hour 45 minutes, until a knife inserted in center comes out clean. (Time will vary with size and material of pan.) Cool. Serve plain or with lightly sweetened whipped cream. Serves 8-10.

If coming to Austin, you cannot pass up the Tex-Mex food. MANY good places abound, but Guerro's on South Congress is great. So is Chuy's on Barton Springs Road, Matt's El Rancho, Z Tejas -- heck, even Taco Cabana is good for a margarita or beer and a quesadilla. Sit outside and enjoy our sunshine. I have another perfect recipe for you -- Easy Cinnamon Pecan Rolls from Alyssa Torrey of Magnolia Bakery. These are a cinch to make, don't require yeast, and they taste amazing. I didn't have enough cream cheese when I made mine, so I added some peanut butter to the glaze...delicious!

Just wanted to say I made the Ina Garten recipe that PumpkinBear recommended. They were awesome! I did double the pecans and used dried cherries instead of raisins. Thank you all for your suggestions. I'm planning on having many more brunches so I can try all of them!

If they have it in your area, frozen Bridgeford bread dough works in a pinch. Let it thaw, roll it out 1/4-inch thick, sprinkle with sugar & cinnamon combined, and add anything else you like (nuts, dried apricots, raisins, etc). Roll up tightly, cut into 1-inch thick (more or less) slices.

Heavily butter baking pans (a good half stick or more for a 9x13), sprinkle with brown sugar, and if you like a drizzle of treacle, honey, or maple syrup if you're into that, the the pecans.

Arrange the rolls on top, leaving a good inch all the way around them (better to do in multiple pans than to crowd them and have undercooked rolls in the center). Brush the tops with some butter. Let them rise until doubled. Bake at 350 for about 40 minutes (I would think), covering with foil if the tops get too brown. A thermometer inserted in the middle should be about 200 degrees for the rolls to be fully cooked.

I improvised something like this Easter morning and it turned out quite well, but I can't recall how long they took to bake.

Nutty Blueberry Buckle:

1/4 c. butter
3/4 c. sugar
1 egg
2 c. sifted flour
2 tsp. baking powder
1/2 tsp. salt
1/2 c. milk
2 c. fresh or frozen blueberries
1/2 c. chopped hazelnuts (or other nut)

Crumb topping:
1/4 c. butter, softened
1/2 c. sugar
1/3 c. flour
1/2 tsp. cinnamon
Blend topping together with a fork.

Preheat oven to 375. Cream butter, add sugar and beat until light. Add egg and beat well. Add sifted dry ingredients alternately with milk, beating until smooth. Fold in berries and nuts into the batter and pour into a greased 9 inch square pan. Sprinkle with crumb topping and bake 35 minutes and cut into squares.

I often add some orange or lemon zest to the batter and sometimes add some nuts to the topping. It's a quick recipe and comes together really easy. If you should use frozen berries straight from the freezer, you may need to increase the baking time. Good luck with your brunch!

My grandmother made the best classic country apple pie. Her recipe is a family institution, and no one can imagine Thanksgiving without it. A few years ago, I was in charge of bringing the apple pie. Being so wrapped up in holiday preparations, I thought I was following the recipe to a T. Turns out I not only FORGOT the sugar, but I also put in way too much cinnamon. The pie looked fine when we sliced it, but after everyone took their (huge) first bites, it became pure disaster. Have you ever seen anyone try to eat a spoonful of cinnamon? It's awful! My entire family was suddenly gagging, spitting out my pie and trying not to vomit. I am still not allowed to bringt he apple pie for holidays.

I was feeling the pressure of preparing a birthday dinner AND a layer cake for my wife's birthday. The dinner prep was done cooking in process. While flipping through Nancy Silverton's "Pastries from La Brea Bakery" at the book store, I saw a recipe I just HAD to make right away - Nancy's Crotin de Choclat yeasted muffins/cupcakes. But I was too cheap to spend money on the book that day (the fact that I'm trying to get the book from this contest for free is suggestive of a trend...) - plus, I thought a test run of one recipe from the book wasn't too much to ask - if I liked the recipe, I'd go back and buy the book.

I memorized the recipe as best I could and wrote down a few notes. I mentioned that these were yeast-based muffins - in my notes, I wrote 1 Tablespoon yeast... though the recipe called only for a teaspoon. After adding yeast to the batter, one is to wait 30 minutes for the batter to expand - my batter expanded... and spilled onto the counter. A disaster indeed. And either a strong case for karma... or proof that I'm careless...
