I used generic, converted rice, which was not "sticky" enough to form balls. Anyone recommend a specific short-grain rice they've had luck with?

Cook the Book: Caramelized Orange Cheesecake

Good recipe.

The cheesecake itself is pretty much straight forward, and worked nicely. Well liked, as was the glaze, which I put on the whole cheesecake, including the sides. (It's more subtle than one would think.)

The candied orange reaction was split, but predictable. Those who like candied orange peel liked it here, those who aren't into the peel simply removed it. Everyone liked the orange glaze, however.

Nicely done. All in all, not a tough recipe and the results are very good.

Homemade Nilla Wafers (Leave the Box on the Shelf)

These are now a family favorite. Because I haven't found reasonably priced vanilla beans locally, I substitute all extract. (I admit the bean would probably make it even better.)

I also skip the pastry bag, and just make larger cookies, placing them traditionally.
