I cooked my first pumpkin over the weekend: Indian styled pumpkin, bulgur & lentil side dish.
Also roasted the pumpkin seeds. Basically, to me, it's just another winter squash.

I eat them straight up. Actually had my first persimmon of the year in San Francisco yesterday while visiting for the Foodbuzz festival. You can also add them to salads.

Favorite chili recipes?
I never make the same chili twice. It's too fun to change things up.
For example, instead of the tradition beef and kidney beans, try chicken and white beans.
Or if you like cornbread, and who doesn't, try baking the cornbread directly on top of chili.

Need potluck ideas
I just suggested this for a vegan dessert, but this would be a great way to impress your coworkers: flourless chocolate cake.
Orzo salad with different marinated vegetables would be good and can be served warm or at room temperature.

In the summer I went to a Latin restaurant in Washington DC and had a fabulous plantain stuffed with cheese and beef. Later, I recreated the dish at home making a few changes: Double baked sweet potato with sausage and cheese. I was really pleased with how it turned out.

I would make the main column of your blog a bit wider to give it more emphasis. Also, agree with others on your choice of colors: not very easy to read.
The good thing is that you can change all those a zillion times till you like it! If that's something you enjoy doing (cooking and blogging), you'll be a success.

I've actually combined lentils and fresh tomatoes in a salad. And for more autumn flavors, I've made lentil, sweet potato and eggplant stew.

I was going to say with potatoes and eggs, but people already suggested it.
I love cucumber/radish/sour cream/dill salad.
Also, you can make a healthy dip with yogurt and a ton of dill.

Lost appetite
Sorry about lost appetite...that's one of the worst things ever, especially if it goes on for a while.
I actually still eat, even if I'm not really hungry--probably not the healthiest idea. And when I do eat, it makes me even hungrier.
I think if you are just not hungry at lunch time, that's fine. The problem is when you have no appetite for days at a time.
One-pot meals
I'm so glad the weather is cooling down.
Of course, it means it's time for chili. Recently I made a chicken and white bean chili with carrots, onions and celery. Here is the full recipe.
Also, roasting is a great idea and takes very little hands-on time. Roast potatoes, carrots, onions, cauliflower, etc drizzled with oil and use any spices you want. You can roast a few chicken breasts at the same time and dinner is ready. My favorite roasted potatoes.

I'm always on the look out for Bulgarian products and Astoria, Queens is a gold mine. There are tons of stores there that focus on Eastern Europe, including Greece, Slovenia, Bulgaria, Serbia, and Russia. I usually manage to stumble upon the smaller ones with the giant buckets of feta, but Titan Foods (http://www.titanfood.com) is a great Greek supermarket and a one-stop shopping destination for me. There are a couple places in NJ you can go to and www.findbgfood.com is a helpful directory. Good luck!
Alex's Day Off
I saw one episode (the one with the grilled radicchio) and I was sort bored. The food looked good, but it came off as "yet another Food Network show", nothing original, nothing that really grabs ya or is even unique. I'm thankful that she's a real chef, but I found it hard to resist to stifle a yawn.
As for her judging skills on Chopped. The premise of the show is just gawd-awful (I think it's just a truncated version of Iron Chef with more battle participants), but her comments could be valid, she's got the credentials. The contestants are professions, not foodie amateurs with no experience. At this level, judges have to get really nitpicky about the food because everyone is a good chef with lots of experience and the expections should be high.
A lot of stuff happens and often is left out to squeeze episodes into the allotted time or to skew the impressions. How do we know that Alex wasn't responding to something else when she was rude to the contestant?

Ditto what everyone else said: Brighton Beach. Lots of markets there, although the only one I've been to is M&I International Foods (some photos here), which I keep going to because I LOVE THEIR CARROT CAKE.

My roommate and I held a Halloween Pregame Potluck, for which I made pumpkin and black bean enchiladas (and I didn't skimp on the chipotle, either).

Brighton Beach is definitely your best bet - the easiest one stop shop for Russian food, both freshly made and packaged, is International Foods. If you want a sit down restaurant - cheap, hearty, total opposite of the trendy crowds of Veselka these days - try Cafe Glechik (also B. Beach).

There's a great russian deli in central, NJ in Marlboro called Arbat Deli that has Kvass and lots of other russian delicatessens. Also a few doors down theres an amazing russian restaurant called Russian Dream.

I forgot to add that the reason I ended up making the pumpkin cookies was that I first made Paula Deen's pumkin gooey butter cake and when I went shopping for the canned pumpkin, I forgot to check what size can I needed. So I bought the big one and needed the small one. The cookies used up most of the rest of the can. I've got a little left...sigh.
I do have photos, so if I get ambitious, I'll get 'em off the camera and onto photograzing.

Alex's Day Off
I think Alex is such a jerk! She's really rude to the contestants on Chopped. To a contestant who was just conversing casually with her and agreeing with her, she actually said, "I'm sorry would you like to sit in my chair?". Then proceeded to pause and glare at the contestant.
I don't watch television anymore (haven't turned it one since august) because I don't like negative energy spewing into my home in the form of nasty interactions like that one.

Her first shw drove me to distraction...it wasn't the cooking, there was just something about it. I was eager to know what she was saying but SHE got in the way of it all. I really like the new show. However it is that Bobby Flay is coaching her, it's working for me! She is certainly qualified ( have you seen her bio?), I like her on Chopped, even if some of the contestants are riduclous from the get-go. I hope the new show does well. She knows her stuff, I like her spin on the food and I always learn lots; she is very free with the knowledge and tips.

Thanks for reproducing tyler's recipe @salpico. I couldn't seem to find it on the FN website. This thread made me so hungry for chili the other night that I made it again, this time with ground buffalo. It was edible in only 30 minutes (I'm sure Rachael Ray has a 30 minute chili recipe), but I let it steep for about an hour uncovered to get good and thick since I made it without the tomato paste. I also added chopped chipotle in adobo as well as couple of jalapenos. In addition to the beans I added a can of very starchy hominy which really helped to thicken the chili so I omitted the cornmeal and instead of ground cinnamon, I let mine cook with two cinnamon sticks. It had a slightly bitter flavor so I added a rounded tablespoon of brown sugar also. I've always used baking chocolate in mine, never just plain old cocoa powder but of course the powder makes perfect sense!

I make a variation on Tyler's recipe as well. There are many ingredients, but it is simple to execute:
Beef Chili w/Chocolate
6–8 servings Cooking time: 3 hrs.
2–1/2 lbs. boneless chuck steak, cut into large cubes
1 quart beef stock
2 medium onions, diced
4 shallots, minced
5 garlic cloves, minced
4 medium bell peppers, roasted, skinned, and roughly chopped
1–28 oz. can whole peeled tomatoes
2 tbsp. tomato paste
2–15.5 oz. cans pink beans
1/4 cup cornmeal
2 tbsp. ancho chili powder
2 tbsp. ground coriander
1 tbsp. ground cumin
1 tbsp. smoked sweet Spanish paprika
1 tbsp. dried oregano
1 tbsp. garlic powder
1/2 tsp. ground cinnamon
1 tbsp. unsweetened cocoa powder
salt & pepper
Season the beef cubes with salt and pepper, and set aside. In a small bowl, mix together the ancho chili powder, coriander, cumin, paprika, oregano, garlic powder, and cinnamon to make a seasoning mixture.
Place the beef cubes in the pot and add the stock. Add additional water, if necessary, to cover meat by 1”. Bring to a boil over medium–high heat, and skim off any foam that rises to the surface. Add in the onions, shallots, roasted peppers, and garlic. Stir in the seasoning mixture. Crush the tomatoes in a large mixing bowl with your hands. Add the tomatoes and the tomato paste to the pot. Simmer until the meat comes apart with no resistance, about 2 hrs. As it cooks down, add a small amount of water, if necessary.
Using 2 forks, pull the meat chunks apart into shreds. Drain and rinse the beans. Stir in the beans and the cornmeal. Simmer for another 45 min. uncovered. Stir in the cocoa powder and simmer another 5 min. Adjust seasoning to taste.

Mine is awesome. First i toss some stew beef in a bit of flour and brown. Then I toss in the crock pot. I then saute an onion in the same pan as the beef deglazing with some diced tomatoes from the can. Add to crock pot. then put in the spices you like. I do cumin, chili powder, garlic, onion, mustard, liquid smoke, tomato paste, a couple cans of crushed tomatoes, etc...then i puree a can of pinto beans and add that as a thickener along with a can of kidney beans (not blended). cook on high for a bit then turn to low. So good.

Beer can chicken is a favorite around here, on the grill or in the oven. Open can, hand to husband to drink 1/3 of beer. Snatch it back before he has more than he's supposed to, add some of the rub to the can that was used on the chicken. Punch a few more holes in the can and coat the outside with oil for easier removal when the bird is done. Insert can into chicken and carefully place on grill, using legs to make a balanced tri-pod. Regular 12 oz. cans work well for 3-4 lb. fryers, and 16 oz. tall boys work well for 6-7 lb. roasters. Brings back summer when done in the middle of winter.

Favorite chili recipes?
I like Tyler Florence's myself. It's from his first cookbook though it must be on the FN website too. It's just a completely New World chili that proves that the foods that grow together go together. I've made it on separate occasions with ground beef, ground turkey, and leftover Thanksgiving turkey all to incredibly satisfying results. He's got an assortment of chilis, beans, and crushed tomatoes as well as a hint of cinnamon, cornmeal for thickening, and bakers chocolate for smoothness. It's the perfect weekend slow cooker recipe.
Carrots and Celery
I always freeze my veggie scraps, unless I have immediate plans for them. Frozen and then unfrozen carrots normally aren't good if you want a dish with carrots in them, but they're perfect for soup/sauce bases. Unless you use liquid nitrogen to insta-freeze them, and how many of us have that sitting in the cupboard at home?
you may not want soup now, but when it comes time to make stock or soup and you have to go buy your mirepoix ingredients just for that you'll kick yourself for tossing the scraps.

Steamed carrots with butter, honey, parsley, S & P.
Celery with peanut butter makes a great snack, or with blue cheese dressing.

I'm with making a mirepoix and freezing in measured amounts for future soups etc. If frozen cooked then a fresh soup would be just a few minutes away. Add some rotisserie chicken, broth, noodles, and you've got chicken soup in 10 minutes.
