Any food you could eat daily til' you kick the bucket?!

Eggs! I really do not eat them much but could have an entire days menu built around them.

Breakfast: Scrambled eggs with hot salsa, avocado, tomato slices and flour tortilla

Lunch: Crunchy egg salad sandwich on rye bread

Dinner: Over-easy egg cook in lots of butter placed on top of pasta with Parmesan cheese and black pepper

Help for a picky vegetarian?!

This time of year, when all of the fall veggies are appearing on the shelves, I like to go through the produce aisle or the farmer's market and just pick out vegetables to eat during the week.

So we may bake potatoes and serve with kale and a salad. The kids like steamed cauliflower and broccoli with a cheese dipping sauce and apples. I love all the different squashes, baked!!

Plus I usually make a soup, chili or casserole a couple times a week to have in the refrigerator.

Slow-cooker cookbook recommendations?

I agree with the library and I like the blog A Year of Slow Cooking. I am waiting for her new book to hit the library shelves.

I just purchased Fresh From the Vegetarian Slow Cooker by Robin Robertson. We have a variety of eaters in the house, so I usually go vegan. Plus, right now it tends to save $$$.

What Weird Family Foods Did You Grow Up Thinking Were Normal?

We were served spaghetti with butter and ketchup for dinner which I still think about ...

Breakfast was often boiled wheat berries which I made for my kids, once (they didn't care for them)

What to do with Barley

I love hull-less barley for breakfast (similar to steel cut oats) with a bit of maple syrup and almond milk. I usually soak the barley overnight so that it cooks faster in the morning.

With the remaining warm barley; I drizzle with a vinaigrette, add favorite veggies and put in the refrigerator for a quick grain salad for lunch or dinner.
