FYI Serious Eats - if you're so serious, then you would know that 00 Flour (NOT OO) is a soft flour used for making ravioli. Harder wheat flours like semolina and durum wheat are used to make longer pastas (with the edition of 00 flour). Bottom line - 00 Flour is not capable of giving chewiness to flour. Get your facts right - then report.

ASPEN, COLORADO...WHERE SHOULD I EAT?

just returned - best restaurants are lulu wilson, ellina and pacifica by far. cache cache is a classic and ajax tavern is fun for an afternoon drink or some bar food. stay away from il mulino.
