NYC Wine Bars!
One wine bar I would definitely say to AVOID is Bellavitae on Minetta Lane- it is a New York magazine Critic's Pick. I saw great reviews online and decided to try it a few months ago..not only was the service atrocious (ie. we ordered a bottle of wine which they took "to chill"..and didnt bring it back until we asked multiple times!) but the food was awful. Everything was fried, greasy, and unappetizing...and it was not cheap.

101cookbooks.com is a great one- all of her recipes are vegetarian and the vast majority are vegan. The recipes are very clean, healthy, and have gorgeous pictures to go along with them!
I would also recommend mediterrasian.com. Though not all vegan recipes, they are all healthy recipes focusing on a Mediterranean and Asian diet and style of living. The website is more of a lifestyle website- which sounds like it might be good for your friend!

blackberries, strawberries, and homemade granola. or bananas with granola-- for breakfast. I'll also use it in place of mayonnaise in chicken salad.

Low sugar in general, or can "healthier" sugars be used? I've made granola with just unsweetened applesauce and brown rice syrup as sweeteners (and no oil!) and it came out pretty good. Still sugar, but it's less processed and has a lower glycemic index.

You can take any recipe you like and substitute the sugar with either Agave syrup or brown rice syrup. Both have a low glycemic index but still provide sweeteness. I use them both all the time (sometimes together). And they're a guilt-free alternative to sugar ;-)

Just as a note: if calories are a concern, it is the oil in granola that makes it high-calorie, not the sugar. Even unsweetened granola usually has around 250 calories for half a cup.

6 cups rolled oats
1 cup shredded coconut
1 cup raw wheat germ (I substituted flaxseed meal)
3/4 cup peanuts or other nuts (I did half raw peanuts, half raw walnuts)
1/2 cup raw sunflower seeds
1/2 cup sesame seeds
combine in a large bowl
1/2 cup honey
1/3 cup oil
1/3 cup water
1 teaspoon vanilla
mix together and pour over oat mixture. stir well. spread in a thin layer on baking sheets. bake in preheated oven at
325F for 10 minutes. stir and bake another 5 minutes. stir again and bake 3-5 minutes. watch carefully to prevent
burning. cool.
1 cup raisins or dried cranberries
add and store in airtight container.

I don't have a recipe but I have some helpful granola-building tips:
• Avoid artificial sweeteners--they're not good. Instead try some l honey
• Use as many nuts as you can--they're jam-packed with omegas, protein and energy
• When purchasing your dried fruits; look for an "unsweetened" claim on the package
• Add flax seeds or ground flax meal for extra nutrition--they don't taste like anything
• Dont forget the salt! Use it sparingly but salt is essential in order to finalize any sweet dishes I find.
* When the granola-"bars" get boring; switch it up and sprinkle it on yogurt
• My favourite dried fruits to add: golden raisins, cherries, blueberries, cranberries and even preserved citrus (orange or lemon)

Blue Hill Granola
from: Eating Well a few years back

4 cups rolled oats
1/4 cup brown sugar
1/2 cup walnuts, coarsely chopped
1/4 cup sunflower and/or pumpkin seeds
2 teaspoons ground cinnamon
1/2 cup apple-juice concentrate
2 tablespoons honey
2 teaspoons pure vanilla extract
1/2 cup dried blueberries or cranberries
1/3 cup raisins
1/3 cup snipped dried apricots
In a mixing bowl, stir together oats, brown sugar, walnuts, seeds and cinnamon.
In a small bowl mix apple-juice concentrate, honey and vanilla. Drizzle over the cereal and stir to coat. Spread the mixture onto a large baking sheet with sides. Bake for 20-25 minutes at 375º, stirring every 5 to 7 minutes, until the granola is crisp and golden.
Transfer the granola to the mixing bowl and stir in dried fruits.

It's cheap, delicious, and you don't even have to bake it! You can substitute any fruit or nuts and, to make it even better for you and cut the sodium, use unsalted nuts (or half and half). Enjoy!

I randomly stumbled upon Wine and Roses on Columbus around 72nd last week, and I really enjoyed it. The wine list is good (though not necessarily super cheap), and the menu is just what you'd want at a wine bar.

Blogs: 101 Cookbooks, Have Cake Will Travel (lots of healthy, vegan, whole-grain baking), The Post Punk Kitchen Blog, FatFree Vegan (excellent resource, especially since it has a function where you can search other veg blogs).
You could also get her some simple cookbooks. I think Vegan with a Vengeance is fun and accessible with family-friendly recipes, and Veganomicon is a good resource. Yellow Rose Recipes specifically deals with healthy vegan eating with normal ingredients. I've also heard good things about Students Go Vegan, which focuses on uber-easy recipes.

I'll second 101cookbooks. Any time I make recipes from that site, they're delicious and unless it's based on an ingredient her man/boys hate to begin with, they tend to be filling enough that meat eaters are left satisfied as well - plus she could use a lot of the dishes as a main dish for her and a side to what her guys are eating.

Tell her to check out Bento. They're healthy, visually appealing and fun to make. There are tons of websites with ideas, pictures, recipes. It's really great. Been making them for hubby for the past 3 weeks to take for lunch and he's been steadily losing weight.

I try to focus on easy, delicious recipes and small lifestyle changes people can make to lead a healthier well-being. Most of my friends are not vegetarian, so my recipes are tried and tested by non-vegetarians all the time. And what surprises me all the time is how people who claim they can never give up meat in their lives, ask me for certain dishes time and time again.
