The Food Lab: Great Chile Verde Without Hatch Chiles

Having lived in New Mexico most of my life, I don't remember one time a local EVER uttering the words "Child Verde", I've heard TV hosts speak of it's rich history to our state and recipes for authentic versions of it but in New Mexico it is simply called Green Chile. We don't try to play up the Spanish/Mexico connection here.

Also, at least our family never really made a pot of this to eat. This sauce if you will was more likely ladled over enchiladas, chile rellenos, or burritos. Also it we never made it with pork, which I always thought was more of a Colorado thing.

This is a good Chile Verde (rolling my R's with my best accent possible) recipe but not Green Chile.

Nominate Your Favorite Green Chile Cheeseburger in New Mexico

Last time I was back home I had a great burger at Buckhorn. It reminded me a lot of Blake's Lotaburger in appearance (patty size, bun, and accoutrementst) but light years away in execution, with a nice crust and juicy medium interior. Bobcat is great as well, but a bit a drive for me when there are so many great burgers within Albuquerque city limits. The Range Cafe (chile relleno burger, helllo!!! :-)), and Slate Street Cafe are among my favorites. Standard Diner used to turn out a nice one as well but I haven't visited in years after they discontinued making their own ketchup, aioli, and pickled veggies, which really made their burger and fries unique and quite delicious.

I don't follow Richman, but Umami makes one of the tastiest burgers I have ever had. Anytime I'm in LA I have to grab myself a Hatch burger, although, I was told by one of their waiters that it contains no actual Hatch chiles.

Green chile pizza is pretty awesome as well. My sister brought me a few frozen tubs of Autumn roast when she last visited but now I'm down to my last one :( luckly I will be back in NM in a month. How I miss real New Mexican food, the place here in San Francisco is no bueno.

Our Favorite Burgers of 2009

This year I got to sample burgers from some serious contenders: Umami Burger, Shake Shack, and Bobcat Bite. I have to give it up to Umami Burger for their SoCal and Hatch burgers. I have never tasted beef so well seasoned (almost too salty but not) and cooked (medium rare). I have never had a burger bliss moment like I had at Umami. Don't get me wrong, I still dream about the Shake Stack (ooey gooeness) and the green chile burger (perfectly cooked with slight heat) from Bobcat but they can't top the Um.
