Can you cook rice?

Not at all. So now I own a rice cooker and I don't worry about it.

The Next Food Network Star, Episode 4 Recap: Share Your Feelings

All I could do after the show went off was laugh at how totally absurd it was and how there is not one person on there who I would want to to watch for longer than 3 minutes.

Lots of mustard. If I'm feeling fancy - mustard and coleslaw. My God, I love coleslaw!

Neo Soul Food

I was going to suggest going to the food network and searching for recipes from Down Home With the Neelys. They've done a lot of things with traditionally southern ingredients that seem kind of noveau to me. Creamed Collard Greens might be a good start.

Growing up, we ate them with scrambled eggs. I remember that they would turn the egggs a horrible brown color but they were really very good.

Food Photography: Affordable Camera?

I say if you have the money to burn, an SLR will probably get you the best results. However, I take all of my food pictures with a Kodak DX7630 and I think a lot of them are pretty presentable. And I don't use a tripod, but I know that it would help.

Good luck!

Season them with some season salt flour, fry. Make gravy, add 'em back. EAT! I had some not too long ago and good lord they were delicious.

Essentials: Guacamole

Try adding a teaspoon or less of worcestershire for umame balance. I learned that tip at Tejas Restaurant in the Twin Cities where the waiters make a fabulous tableside guacamole.

Essentials: Guacamole

I disliked guacamole growing up. I was only exposed to the supermarket and cheap restaurant versions though. Then one night my wife and I went to dinner with some friends, all of whom were either cooks, bakers or restaurant managers. They raved about the guacamole at that restaurant, but I was still hesitant. That is until our waiter came back and prepared the guacamole at our table. He cut the avacadoes, tomatoes, onions cilantro, garlic, and squeezed the lime right there. It looked fresh. good and inviting, and my reservations about prepackaged and mass produced guacamole didn't apply, so I tried a little. I ordered another serving for the table because my wife and I were eating so much of it. We are now guacamole experts.

When we have friends over for dinner that haven't had our guacamole, we like to use the same approach. We will wait until most everyone is there and then make the guacamole right in front of them. We have converted a few non-guacamole friends to the green side. We live in GA so we like to use Vidalia onions.

We like to eat it with steak. For some reason it is a perfect pairing.

3 Has avocados, diced
1 medium tomato, diced
½ onion, diced (sweet, Vidalia, or red)
½ lime or 3 Tbsp lime juice
2 Tbs cilantro, chopped
1 clove garlic, chopped (optional)

Combine all ingredients in a medium bowl and stir.

Serve immediately or refrigerate for 1-2 hours for flavors to combine.

I'm lamora and I live in the Central Valley of California. Half British, half Latina (air force brat). I spent most of my early years in England, until transferring back to the states when I was 17. I married a latino, who had never had anything but straight mexican foods, birria, tacos de cesos ( don't make me tell you what that is) and believe me, our first date dinner of roast beef, mash, brussels & gravy (which I cooked) was washed over with a slurp of his smuggled in hot sauce!!! I was mortified...but you know what...22 years later, he has grown to appreciate different foods. I am from a family of 8 and while in English school, took cookery lessons since age 9. We grew up cooking homey, hearty meals for the family and there are quite a few "twists" on the food my Brit mum tried to make for my dad back in the States...Chile on top of mashed potatoes!! (try it, it's delish!!) Anyway...I love this blog and hope to get to know you all!!!!

I was shocked to read the list of ingredients. I always add dry refrigerated chicken soup base prior to salting. These flavors compliment each other, try it!

Essentials: Guacamole

I love all of these suggestions! I was schooled in guacamole when I lived in New Mexico and traveled extensively throughout Mexico. Now I live in Denmark and they only way to get good guac here is to make it myself. Some of my Danish friends seem to think that "authentic" guacamole contains creme fraiche. Oh the humanity!

From Recipes

Essentials: Guacamole

I like to keep it simple, just avocados, lime juice, garlic, salt, pepper and a little cayenne to add some heat.

Soaking onions in buttermilk overnight?

@never - that's the recipe I used last night when I made them too :) they were great, but my dipping sauce needed some help.

From Recipes

In an old Pink Adobe cookbook by Rosalea Murphy, the guacamole recipe specifies mashing the avocados with a SILVER fork. Any chemists out there know what that's about?

From Recipes

If the picture represents the avocados you use, I'd suggest buying better avocados.

From Talk

What's your go-to dinner for one?

If I am eating by myself, I almost always make a meal that involves sauteed onion, green bell pepper and mushrooms. Whether I combine that with baked chicken breast or in a half-assed frittata is generally the only thing I have to make a decision about. I usually use goat cheese as a nice addition, and use sriracha as a condiment.

The Next Food Network Star, Episode 4 Recap: Share Your Feelings

The FN seems committed to destroying whatever but of credibility it has left. This entire episode was a commercial for Red Lobster. Now they've gone beyond product placement. A sponsor can virtually buy an entire show. But even worse is Guy Fieri, whose show is supposed to be a love note to independant, quirky, regional, family run restaurants, shilling for TGIF - a homogenized, standardized, national corporate chain. The kind of place that is destroying the "diners and dives" he's supposed to be a champion of. You can say that's him as a person, and not FN, but it still shows that FN is all about selling out.

this week i've made mario's pasta pomodoro twice in a row and would have made it again last night but i got home late and had an unexpected visitor.

it's so wonderful: saute some chopped garlic and a pinch of red pepper flakes until they're brown in the inevitable EVOO, then add a handful of halved sungold cherry tomatoes and stir it around for a minute. add a handful of chopped basil. throw it on top of some noodles along with some grated parmesan.

if i don't eat an enormous salad before i sit down to this, forget about it... i'll eat until i'm coma

Dinners alone usually give me a chance to cook all the things my boyfriend hates. I once ate an entire pan of roasted brussells sprouts for dinner. Other delicious meals have included a big bowl of mussels in white wine and garlic broth, pasta puttanesca (capers AND anchovies---heavenly!), and the occasional container of cottage cheese.

Still, the ultimate dinner for one is a fat heirloom tomato, a ball of burrata cheese, and a crusty chunk of bread, with lots of olive oil and a little bit of salt. Luckily, the boyfriend agrees with me on this one, so I don't have to wait for a night alone to eat it!

What's your go-to dinner for one?

Weird, I love dinner on my own, now. I used to hate eating alone, but this past year I've had to have dinner on my own a couple of times a month and I really like being able to eat what I want, when I want.

Usually I plan the meals for hubs and myself, keeping in mind his preferences. While we like the same things, I could eat Asian everyday and not get tired of it; whereas, hubs needs a few meat & potatoes meals a week.

I figure if I have to be on my own for a meal, then I only need to please myself. I allow myself to be indulgent and have a Korean feast if I feel like it.

From Talk

What's your go-to dinner for one?

Place a chicken breast on a large piece of foil. Liberally sprinkle (chicken, not the foil) with pepper, ginger, garlic, dash of sugar. Add cream, soy sauce, top with chopped green onion. I use the entire bunch. Draw foil up and over, make a pouch. Bake @ 350. Serve with sauteed mushrooms.

From Talk

sad to say that it's probably dry cereal and nuts, or cakes and cookies ( or whatever's in the fridge) eaten while reading a book...I always want to have a good meal when I'm eating with family and friends, but I dont really like eating a proper meal alone in the dining table
