You should definitely try an almond flour or coconut flour crust. I've found that purely almond flour and butter make a wonderful crumbly, buttery, flaky crust.
Elanaspantry.com is a great gluten-free recipe blog. Elana has one here that I haven't tried specifically, but I've tried similar, and they're wonderful.

She uses grapeseed oil, which in my opinion, provides an unmatched buttery flavor (even more than butter itself! I swear!)
