Potluck breakfast recipe needed

Look at the Bisquick website for the Impossibly Easy Breakfast Bake. I substitute egg beaters, and turkey sausage, low fat cheese, and fat free evaporated milk. I omit the onions and add sliced grape tomatoes and serve with a peppered gravy or hot sauce. Adding more eggs or egg beaters than the recipe calls for works well too. Also I lowered the heat to 375 degrees.

Left over French Fries - yeah, I know I'm cheap!

Cut them up and pan fry with bell pepper and/or any other ingredients that go with eggs. Add chopped cooked sausage. Add beaten eggs or egg beaters, turn down heat, cover and cook until eggs are set. Sprinkle with cheese and place under broiler until melted. I love this with hot sauce.

Potluck breakfast recipe needed

I do not like most breakfast casseroles -- most I have been served contain lots of "cheese food" "cream of" soups and other scary things. However, I do have one recipie that I make from time to time that is incredible. It is from the allrecipes website.

I make a few changes - I grate my own potatoes ( but I am sure frozen would be fine.) I also sometimes switch out the cheeses although I do love the swiss. Sausage is as good (if not better than the bacon) it is a great basic recipie that can be adjusted to suit your tastes.

This casserole is great room temp as well as piping hot.

O.K....coffee will be ready when you get here. I have a mason jar of bacon grease in the fridge...between the three of us we should be able to clog everyone's arteries! lol

@Perk - I looked up that recipe and it actually looks pretty good. A few modifications with the ingredients of course. Like adding at least 1/2 can of that fat in a can stuff. See you at mepolo's!

Potluck breakfast recipe needed

Thanks everyone for the great ideas! I'm definitely going to be cooking something, since I like to leave things like bagels, etc to those who don't cook. I'm also not worrying too much about allergies....there are 60+ people in our office, and quite a few are bringing something....so I think there will be enough other things for the non egg eaters. I'm leaning towards a breakfast casserole....thanks bitchincamero & perkymac for the ideas.....or a mini frittata type dish...using mini muffin pans. The party has been moved to next Friday...so I'm going to be experimenting this week-end....breakfast anyone?

@izatryt - sorry, only 4 Tlbs. of butter mixed with the potatoes for the quiche crust, but I don't see why you couldn't use a couple of sticks, or even substitute lard or that greasy fat in the can stuff. That stuff delivers on it's promise!
