The best pie I ever had (and still get occasionally) is at Wildfire Restaurant in Waynesville, NC. It is a Coconut Cream pie made by the owner, whose name I don't know, but she only makes it when she's in the mood, and it's not on the menu...you have to ask if it's available. I love it so much that last year my wife ordered a whole pie for my birthday in place of a cake. I was in heaven.
