Ed Levine on Má Pêche's Burger

Had that burger on first night. Came out medium rather than medium rare but it remained juicy and flavorful. Homemade pickle also a delight, as well as the thrice-cooked french fries. Would come back to Ma Peche for burger and banh mi alone!

Ma Peche, 'Momofuku Midtown': Tien Ho Is a Peach of a Chef

I've had dinner at the Mezzanine three times now...it is more serene, better to contemplate the food. Love both banh mis, but I give a slight edge to the house sandwich. Love, love, love the chicken noodle soup and the rice noodles! I also agree that the grilled cheese sandwich is just heavenly. The Chambers hamburger is not to be missed: a formidable entry into the city's hamburger wars. And those fries are just delicious! Have the squid salad: it's like pad thai without the noodles!

When Reviewers Get Spotted

I have to agree: the mood in the restaurant changes when a critic is spotted, and they pull all the stops to impress. Even bloggers get extra attention when they are identified by staff.

Shake Shack, Bill's, and RUB: It's Rainin' Smashed Burgers In This Burg

Ed, when I had dinner there this weekend, I was already instructed by Nick Solares to order the burger juicy. However, my waiter refused my request to cook the burger that way, and I ended up with a dried-out patty. When I then ordered the Sunset and Vine, I insisted that the burger be cooked juicy this time. The waiter eventually relented, and the resulting burger was properly cooked. That's the difference between Shake Shack and Bill's Bar and Burger: Shake Shack does it right without it being requested.

Shake Shack, Bill's, and RUB: It's Rainin' Smashed Burgers In This Burg

I had sandwiches from both Shake Shack and Bill's Bar and Burger during the weekend. Both hamburgers are delicious and moist, but as Shake Shack burgers are uniformly cooked medium to medium rare, the hamburgers I had at Bill's were cooked medium well, resulting in patties that were almost devoid of juiciness. I had to insist that the burger be cooked medium rare to my waiter at Bill's before I got it properly cooked. Otherwise, either burger is worth it.

Sugar Rush: Sweet Potato and Pie Crust at Momofuku Noodle Bar

I tried the soft serve ice cream flavors separately, and I must say, this is one instance where you should get the twist. The pie crust flavor is salty, for sure, but the sweet potato ice cream helps even out the salinity. And yes, get the toasted marshmallows.

Fall At Momofuku Milk Bar: Rice Pudding Pie (And Stuffing Soft-Serve)

The rice pudding pie has been available for almost three weeks now. It took me a while to like this pie, but the gingersnap crust and caramel apple bits certainly won me over. I also appreciate the contrast in textures offered by the cooked rice grains mixed with the custard like pie filling, which is spiced with cinnamon and nutmeg. Really lovely dessert.

Ma Peche, 'Momofuku Midtown': Tien Ho Is a Peach of a Chef

Here's a voice from the Peanut Gallery (Los Angeles). On the West Side, Pho 99 at 11819 Wilshire Blvd, has excellent Banh Mi for about $4.95, delicious Pho, and many other Vietnamese dishes well prepared at low prices. Pleasant atmosphere with attractive art on the walls. Accommodating waiters, who take substitutions helpfully (noodles instead of rice in some standard dishes).
Don't be put off by seeming distance; it's their newly growing command of English that makes THEM uncomfortable. With a few seconds of effort they warm up and become quite friendly. And any back-and-forth when asking for substitutions is not reluctance, but an attempt to get your request clear in their mind despite any possible language barrier.

I've eaten there several times a month. Recently I was under the weather and their chicken soup Pho was a life-saver. it's not just from Jewish mothers.

Ma Peche, 'Momofuku Midtown': Tien Ho Is a Peach of a Chef

@Pupster: I'm pretty sure 99% of Ed's reviews have prices in them. The difference this time was that none of the prices were online and we couldn't get in touch with someone who could tell them to us...but lesson learned for the future: take note of them while eating!

Oh, and the house banh mi wasn't very good. Some slack because they are just opening up, but really, that sandwich was nothing to write home about. There are better versions in Brooklyn for $4.

From Serious Eats: New York

Ma Peche, 'Momofuku Midtown': Tien Ho Is a Peach of a Chef

You neglect to price any of these items, but I'll do it for you because as Ma Peche is inside the Chambers Hotel, you are working with hotel food prices.

First, the Midtown Lunch specials are only on weekdays and for a limited time. We found this out when we went on Saturday.

Bahn Mi $10 (just a six inch sandwich, no side, no garnish)
Pork rice noodles $18
Burger w/ fries $16

The 4 cookies and milk $10 (!)

In other words, this stuff (like the downtown Momos) are overpriced for what you get. Unless you get multiple items, expect to be hungry with these portions.

the soup isn't served at breakfast. just lunch and dinner starting at 11:30, I believe. No brunch, gargupie. Breakfast goes from 7 to 11. Then the all day menu starts. Dinner sounds great, momstheword. That's the time to go during the week.

Brooklyn Star Brunch: The South Has Risen Again in Williamsburg

To SugarApple I say -

Crisco is now transfat free.

And if you keep butter cold enough and don't overwork the dough, you'll have a delightfully falky biscuit that way too.

Brooklyn Star Brunch: The South Has Risen Again in Williamsburg

Just curious - how do restaurants in NYC make a good, flaky biscuit? No trans fats (i.e. Crisco) allowed and I can't see New Yorkers loving the lard. What do they use?

From Serious Eats: New York

Shake Shack, Bill's, and RUB: It's Rainin' Smashed Burgers In This Burg

At Bill's Burger, the Fat Cat was a wonderful thing, due in part to the carmelized onions. However, its still the meat that shone through brightest, and for that, Bill's Burger is less deserving of any accolades than those mad meat scientists downtown. Asside from those carmelized onions, my burger sported a seasame bun (I custom ordered this but maybe I should try it as is with the english muffin next time) and American cheese. Clearly, this isn't the most brilliant example of a LaFrieda burger. I'm not saying simple is bad. All I'm saying is, true praise is deserved only when you take a fundamentally great ingredient and make it greater through your own ingenuity. And that is why Shake Shack wins. Meyer's Shack sauce is a maddening addition to the meat that mystifies and excites (Direct quote from the gf trying her first Shack burger: "Yo, why is this so good?! Like seriously... why!?"). Bill's is a little more straighforward. Also, I prefer the way Shack griddles the patties, not smashing them as severely as they do at Bill's, where a juicy medium rare is unattainable because the meat is pressed so thin. The upshot is, I'm nitpicking, and really, I loved Bill's burger. But unlike you, Ed, choosing between Shack and Bill is not like choosing between two of my equally loved children. It's like choosing between two of my children, one of whom is uglier and less intelligent. (I'm jk, I don't have children and I wouldn't, at least I don't think I would, love an uglier child less)
