If I hadn't come from Philly to eat in Chicago I may have gave a crap that the wait was two hours. But I think the real difference is how bad you want something. Did you ever wait for six hours to get concert tickets? I never complained about that, and that is far more uncomfortable than drinking great beer down the street at Hopleaf.

These people do come off slightly arrogant in the way they run the show, but the pizza is perfect. It was more inspiring than any pizza I've eaten in NYC(except Di Fara). They are baking pizza with the best ingredients and the results are really something of beauty.

I can't wait to go back!

I went to Maria's on July 4th. It's a wonderful place if you're not eating. It was the worst pizza that I've ever eaten. Not try to slam these old folks, but the ingredients were of the lowest common denominator. It was crusty and dirty just like DiFara without the flavor. Do yourself a favor next time your in Milwaukee, call Little Caesars.

A Mini San Francisco Pizza Jaunt: Does Alan Richman Know His Bay Area Pizza?

Just went to Great Lake on Saturday. It was clinical, sterile, Alice Waters fresh, pretentious, and delicious. Pretty chi-chi. Never seen anything like it. I'm still contemplating my experience.
Had the mortadella pie with, green garlic, fresh cream, and mona cheese. Everything looked like it was plucked from the farm same day. There were only three pies. The crust/crumb was as good as any I've tasted.
Long waits, pricey pies, totally worth it. My top 5.

anyone who knows anything about baking, knows that water has little to do with the end result, unless you're using really crappy water. it's similiar with beer. the main difference is the different salt and nutrient levels of each. if you really want to, you can replicate any water in the world. it's still one of those stupid arguments about why this is better than that. if you look closer at the situation you'll find that any average establishment in nyc for example has more experience with taste and baking than some pizza shop in nebraska. that is the real difference.

Just gave my two weeks at the South Philly Taproom. Going to live with my brother for the summer in Madison, WI. Got a job at Pizza Brutta. Derek is going to show me the ropes for three and a half months. They make their own mozz., source local ingredients, and have a beautiful wood-fired oven that cooks pies at around 850F. The pizzas are more righteous than anything in Philly. Will post some pics in late May.

Definitely go with Dansko's. I have a bad back and was recommended these shoes a few years ago by nurses and doctors, and let me tell you, they have been a godsend while standing for twelve hour shifts. Your feet are probably going to feel a little tired, but that's what insoles are for.
On a side note, I just left my job to work in the pizza business. Pizza Brutta in Madison, WI. I always wanted to learn the wood-fired oven method, and make fresh mozzarella.

Alright, lemme tell you somethin about NY pizza....it's some of the BEST pizza out there.

BUT,

That doesn't mean its THE BEST.
First of all, its an opinion so everyone's answer for the best pizza will differ...period.
I can't tell you how many people tell me NY pizza is the best but have never been to Chicago, San Francisco, Verona, or anywhere else for that matter. Try pizza all over the world THEN come back and tell me NY pizza is the best!! Give me some reasons why NY pizza is the best! Don't just say that it is.
Having lived there for a number of years this conversation would come up constantly. Often the answer was "its the water used to make the dough" Awesome. There's some substance to the answer, but why? Why is the water better? Because it comes from upstate? What's different about the water there than the water from the Sierra Nevadas? or Colorado Rockies?

I love NY pizza. Especially Emelio's and Lucali. Can't find pizza like that anywhere but NY. Just like Gino's East in Chicago, Zachary's in Berkely, and MellowMushroom in Atlanta.

My point is, New Yorkers are doing themselves harm by saying that NY pizza is the best because thats all they know or that it is just because it is.

While in college, I had the glorious opportunity to eat the single BEST pizza I have ever eaten, and I mean I eat the whole thing, and thats a sheet pan pizza (you calling it pizza strip?) at Caserta's.

I don't know how they make this thing, but it is a PERFECT blend of crust, sauce and cheese. Its one of the best foods I have EVER eaten, ANYWHERE in the usa.

Thanks to the Slicemeister's note about it re-airing yesterday, I recorded it and just watched it. I love Chris Bianco's line about all the goodness coming from the burnt ones. Is that guy the Pizza Yoda or what? @Karol I like the combination of post-oven arugula and shaved Reggiano very much, but sans the tomato sauce. I sprinkle on lemon juice along with the olive oil instead and it's always well received. I made one last night with Prosciutto di Parma under the arugula. It was definitely my favorite of the night.

@gaffer Thanks very much for the compliment. As far as waiting goes, I always use the excuse that I have to get moving on the next pie so I can grab a slice right away.

I had visited the old Fidh Piers Daily Catch location and didn't enjoy it nearly as much. The atmosphere in the 22 seater on Hanover Street is very unique. Boy do I miss that place. Last time I was there was the day in 2002 NBA playoffs when the Celtics came from 26 down in the fourth quarter to overtake the Nets. It was by far the most exciting sporting event I have ever attended. And I've been to a slew of Yankee post-season games.

That's the problem with being a preeminent pizzaiolo. Your guests and family get to eat it your pizzas at their optimum. Right out of the brick oven. While you have to wait. I'm sure you get dig in right away some of the time but...

I always liked Santarpios with its easier parking but Regina's original in the North End was as good. I remember when Daily Catch started. The guy specialized in calamari and other squid dishes and had a hard time in the beginning. But then he took off and had a number of establishments.

I agree wholeheartedly about pizza dying. However most pizzerias would have to raise their prices considerably to make up for the lost revenue that takeout would have generated. Before customers in the dining get too upset, they should consider how much their pie would cost it they didn't do takeout.

every friday we are in the star leger
we have done 60 and will do at least that many more
only liking 25 so far of the 180 pies we have tasted
used to say i never met a pizza i couldn't eat well i have been proven wrong sadly too many times.
by again, i can only speak for my self after some 50 years of eating.
