Watch Pizzarium's Gabriele Bonci Make Pizza
i've been talking about pizzarium for years. it was the best pizza that i had in italy, anywhere. i was all over naples, sicily and rome, and pizzarium was amazing. it was naturally fermented and the toppings were superb. some of the best pizza i've ever had. i think the guy was a proper chef and then opened this place. it's a tiny storefront. they had good beer. go here.

New pizzeria in Philly, Zavino. It blows Stella away. The chef used to work at Hearth. Please don't give Stephen Starr any undue credit, especially when he blatantly rips off everything from good pizzerias. It's like Motorino lite. And shame on Ed for his insight on the Stella review. It is unfortunate that the Philly food critic needs confirmation from Ed for his 3 bell review. Sad. I'll take my comments of the air, thanks

Do you really think that Maria's pizza, is anything more than nostalgia and really makes good pizza? How did you convince Ed to like it? I do agree with the rest of your choices, although I would still rather eat at DiFara over Motorino. I know that Ms. Ray loves Motorino, my friend has sat next to her several times.

Statement from Chris Bianco Regarding Absence from Pizzeria Bianco
I flew from Philly to Phoenix. It must of been closer to 10-12 hours to wait for Chris' pizza, and I can't wait to go back. Love that dude and his pies. And by the way, you don't wait in line for three hours, you wait in the bar dummy. Take care Chris.
Motorino: No Sleep 'til Naples
Was there last Thursday. Way different vibe, a little more ambiance. Had two delicious pies, brussel sprout and bacon then the white pie with prosciutto. Great flavors, nice crust and good price. We had a bottle of Nero D'avola and two pies for $60. Really affordable.
I do want to say that the crust is not as excellent as Anthony's. It's still better than anything in Philly. Will enjoy again soon.

Also like to put thin slices of soppressatta on a pizza right after it comes out of the oven. The hot pizza warms the fat and it melts just right without cooking the meat.

Even regular soppresatta is better than pepperoni. The higher fat content and overall quality holds up great in any oven. They do still have it at Pizzeria Stella too.

I've been to the Cantillon brewery in Brussels and it ain't spotless, but I still spend upwards of $50 for a bottle. The thing is, the pizza is cooked, comes out of the oven hot, and is safe for consumption. I can only hope that the dirt can turn some of the people away to make my wait shorter. It won't be around forever.

Great Lake Is Great Shakes: The Windy City Finally Has Great Pizza to Call Its Own
If I hadn't come from Philly to eat in Chicago I may have gave a crap that the wait was two hours. But I think the real difference is how bad you want something. Did you ever wait for six hours to get concert tickets? I never complained about that, and that is far more uncomfortable than drinking great beer down the street at Hopleaf.
These people do come off slightly arrogant in the way they run the show, but the pizza is perfect. It was more inspiring than any pizza I've eaten in NYC(except Di Fara). They are baking pizza with the best ingredients and the results are really something of beauty.
I can't wait to go back!
