this is a great article - and it makes me want my favorite rotisserie in the DC area - crisp n juicy.
I made this last night - tasty! my shallot didn't get very brown though, even after 45 minutes.
I finished these in the butter in the oven with parmesan and served it with tomato sauce. SO good.
It's also easier when you roll the dough into a "snake" and pinch off the ends to toss in.

love the title. (re-mix!) didn't get the pork stock made, I figured a little browned pancetta would add a nice porky bent to this. I threw a few other stock bits in, going to leave t overnight and see how it does. thanks for posting!
this looks delish. would salting (and rinsing) the eggplant first be recommended for this, to get out some of the bitterness? I do that for eggplant parm...
