Boiling/blanching the broccoli is to keep the fresh green color of the broccoli, although I wonder why I have to boil it until tender and THEN fry until tender again...Isn't it already tender with the boiling? :S But, all in all, it's a recipe I will definitely try soon (sauce that clings!)! I seriously thought that was pesto when I saw the picture!
