Procrastination Picadillo
The BEST picadillo is from Steve Raichlan in his cookbook Miami Spice.
It is with turkey - which serves the flavors well.
1 lb turkey
1 tsp cumin [i use 1 Tbl]
1 tsp salt
1 tsp fresh ground pepper
3 cloves garlic
1/s minced onion
1/2 red bell pepper chopped
1 small tomato, seeded and chopped
10 pimento stuffed olives chopped
1/4 cup raisins
2 TBL capers and 1 TBL caper brine
1/2 cup dry white wine
1 TBL tomato paste
Really good!

I can really relate to the onion problem. I often wondered how they manage to chop onions on TV without blubbering through the show. Over the years I've tried some pretty goofy ideas (just try chopping an onion under running water-the good news-the blood goes right down the drain!) The best tip I've used is to chill the onions for 30 minutes or so before chopping. (Given your 3 hour time schedule for the recipe, this shouldn't be a problem!)

You can usually pit olives easily buy smashing them with a glass with a flat bottom or something equal to that. Smashing them is the key, makes it so so fast and easy. Of course this works best with softer olives, but also works with firmer ones :)

@jpmcd- Nope. Pimento stuffed olives have pimentos where the pits were. I had Spanish Olives (purchased for a yet unmade Chicken Marbella), which still possess pits. Pimento stuffed are better in this dish, not to mention less of a pain.

I'm sorry. I forgot to tell you you should add cinnamon (even though it's only traditional in MY picadillo) and I agree with you about the bay leaf conspiracy and yeah, there were a few other things I changed in that recipe. I thought you would make a big deal out of it if I told the truth. Glad you were able to gloss over it without any comments. I'm sure it was tasty. I'm wishing I had some right now.

@bitchincamero- First of all, I spelled your name wrong, and I hate that. Sorry! Second, I intended to mention that this isn't spicy, shouldn't have cheese on it, and a few other things. As it is, I went on far too long. I would bet, if you tried it, this might taste like you think it should. Then again, maybe not.

Robert Burns Woodward is the ultimate procrastinator.
As an undergrad at MIT, he got to the point where he needed to take 186 units in one semester (regular is 48). The units each class at MIT counts for is determined by the estimate for how many hours the class will require each week (lectures, labs, homework, etc). With only 176 hours in a week, he not only had to skip most lectures and not do most of the homework, he actually had conflicting exams to the point he had to calculate which ones he could miss and still pass a class as long as he got 100% on the other tests for the class.
I say ultimate in that he waited a long as he possibly could before starting something and still getting it done. Anyway, sorry for the non-food related comment.

Picadillo doesn't take cinnamon - just thought I'd state it for the record. And only people from certain regions in Cuba add the raisins. It also doesn't include white wine, red wine vinegar, chipotle powder or cayenne pepper. This does look tasty, but it's not picadillo.
