Ooh, my favorite Easter food is definitely ham. A nice baked ham basted with honey, pineapple juice, brown sugar, and a little bit of soy sauce. Baked in the oven until the edges are crispy. My family can't wait until we sit down to eat. We all stand over the stove after the ham has come out to slice off thin slices of that delicious caramelized edge of the ham.

Tamales! Who else loves them?!

So you all are talking about Mexican tamales- has anyone ever had Colombian or Venezuelan tamales? Those are my favorite by far. I think the masa is much tastier and there is a huge variety of fillings - chicken, pork, garbanzos, capers, olives, raisins, onions... to name a few. The biggest difference, though, is that they are wrapped in banana leaves instead of corn husks. So good!! I know there used to be a lady selling homemade ones on 49th St off of 6th but that was a couple of years ago. Not sure where else they are available (although admittedly I haven't looked too far). If you ever get a chance you should definitely try them! (They're also sometimes called ayacas - but there is some debate in my family at least as to whether tamales = ayacas)

Gotta be canned whole tomatoes just like many people who have commented so far. And boxed chicken broth as well. Always have a stock of these in my pantry!

My ex-boyfriend's mother makes wonderful tamales elotes, fresh corn tamales. It seems that there is little masa and mostly fresh corn, some of it run through a food processor or blender. Then wrapped in fresh husks and steamed. She serves them with a thin, red, hellishly hot sauce and, just for us tender tongues, sour cream. That is what summer tastes like!

Hey Joturtle
Any chance you'd share your Aunt's hot tamale recipe?
I've haven't been able to find an authentic one anywhere.
Thanks

As a "chocolaholic" I love chocolate "eggs" - but I also look forward to our traditional Rack of Lamb, Rutabega, and Asparagus. Can't wait!

My favorite easter food (aside from all the deliciouc candy that I get to eat!) is baby back ribs. I know it is not the typical Easter dinner main dish but in my family it is tradition.

Easter Pizza which is a traditional Italian style pizza. Its has two layers of curst (top and bottom) with many different types of cheeses and meets inbetween. BTW, it has no sauce and is absolutely delicious.

We love Lamb for Easter. Jesus Christ is our shephard. He calls us his sheep. Easter is about Jesus Christ rising from the dead. We honor our Lord and Savior on Easter and thank Him from the bottom of our hearts.

I love a pork loin with a balsamic vinegar/raisin/onion sauce! Peas and carrots, new potatoes.

A glazed, spiral-sliced ham; but it has to be baked until it is just beginning to crisp on the outside. Yummm :)
