Healthy & Delicious: Marcella Hazan's Lemon Roasted Chicken with Carrots and Potatoes
Thanks for the recipe! It sounds yummy but I wouldn't call it healthy. A lot of the (saturated) fat from the chicken is going to be absorbed by the potatoes and carrots. I'll try it boiling the potatoes and leaving the carrots so the chicken doesn't boil in its fat.
