Oh dear...Low Carb recipes?

I have several recipes that I've actually TRIED and we love. I try to take pictures of them as well. REAL people pictures, not those that are "styled" LOL! Here is a link to my blog that has some already. Scroll on the right to see the list! We LOVE variety and I "torture" my family with new ones at least 2-3 nights a week.

Oh dear...Low Carb recipes?

Zucchini Ideas?

I make hash browns with them or just dice them a put them in a nonstick skillet w/the herbs of your choice. It's amazing how once they become crispy they are a whole new experience. Also a REALLY goot way to get kids to eat them!

Oh dear...Low Carb recipes?

I'll post a few recipes I've tried during my first week of low-carbing it, incase anyone else is interested:

- stuffed mushroom caps (crab meat, parmesan cheese, fresh herbs, and mayo to bind although I think I'll sub cream cheese next time)
- salmon patties (canned salmon, or fresh I suppose, fresh herbs, a little onion and an egg to bind, lightly pan fried)

and I think I'll try her zuccini carpaccio next
- plain yogurt (which I find disgusting) made palatable by organic, reduced sugar apricot jam from trader joes...I would like to marry that jam
