I don't think anyone should feel ashamed. If you have that many salts I think it's time to embrace your fancy pantsness.I don't know that I would kick my pepper out of it's mill though. I would just spring for another mill to keep it fresh ground.

It really gives you an truly intimate sense of what it was like in TFL kitchen back in the day. It's an amazing article .One that could only be written by someone who was there personally and understood how serious & committed you need to be to achieve greatness. I can almost imagine the looks on the cooks faces as they stood there off the line watching him (probably with jaws dropped) as he single handedly replaced them all.Lucky, is the chef that gets to inspire while they have a great sous chef to be the tough one or "equal opportunity a.." and "make the magic happen".Thanks for posting this!
It might be topped by just about anything that comes out of Anthony Bourdain's mouth when he is a guest judge. I wish he were on more often.

Wow. That's almost exactly the same recipe that Tabla's Chef Floyd Cardoz has been using for years (it's also in his book "One Spice Two Spice"). And actually, the flavor profile (mustard seed, coriander and fennel) looks pretty Indian as well. Wonder if there was some uncredited sharing going on here?
