Easy One-Pot, No-Knife, Lighter Tuna Noodle Casserole

I agree, the lighter flavor is pepped up by adding a bit of heat. I used some hot sauce too, but next time I'll try adding some red pepper flakes to the sauce while it's cooking.

Creme Fraiche is also a little hard to come by, I can't get it at my regular grocery store. I'll have to try the DIY method (http://seriouseats.com/recipes/2011/02/how-to-make-creme-fraiche-in-1-easy-step.html) or try out some plain yogurt or sour cream even if they're not quite as optimal.

Also I used lime instead of lemon, which works fine as expected.

The Best Egg Salad

This was hot around the blogosphere for a while so many have probably heard of it, but Avocado Egg Salad is also pretty darn good. There are many recipes out there, I used eggs, avocado, salt, cilantro, green onions, lime juice, and a bit of homemade mayo proportioned to taste as I mixed it up. Honestly one of the best sandwiches I've had! Now I'm hungry...
