I may try the brine thing this year. Then I'll roast it with lemons inside and lots of seasonings under the skin
Only if it's just right will I eat it - not too sweet, not gummy, cold, firm, with a perfect crust. I'll never again eat a bought one ('cause that's where I learned what I don't like about it).
Not in the bird, not on the stove. I bake it as a casserole, using a favorite family recipe that is full of butter, sage, celery and onion. It's the best Thanksgiving smell for me!

A long leisurely meal of Dim Sum at a boisterous Chinese restaurant.
cheese omelette & frites at Bistro Jardin or closer to home smoked fish platter & bagel at Barney Greengrass
It's a roaming brunch. The SuperHeeb (white fish, wasabi roe, cream cheese, on a flat bagel) from Russ & Daughters, followed by a red velvet muffin top or a blueberry scone and coffee from nearby Babycakes bakery.
Bagel, toasted, Cream Cheese, Lox, but I would be willing to try all of the above.
I love a classic egg and cheese from the corner deli.
