hey - I like your breakfast suggestion - but am a little afraid of eating raw old-fashioned rolled oats. Um - turning a bit pink - undercooked oats give me frightening gas - is it just me? I guess I just may have to try and see... Obviously it works for you... But note: when baby comes you may want to switch to maple syrup as honey is a no no for babes
I've been a good 15 years with no microwave - and never miss it. I imagine it is all what you are accustomed to. I thaw frozen spinach in warm water in the sink. I warm milk on the stove and use a tea kettle. I reheat things with butter in my cast iron skillets. I never liked the uneven heating and unpredictable outcomes I got when I used a microwave. If you get rid of it - I doubt you will miss it much - but you will love the counter space.
Have cooked brown rice on hand - can always whip up stirfry for an easy dinner

Congratulations! I recently did back-to-back pregnancies (not wholly recommended) - and a healthy diet was crucial to getting through. I ate a lot of wild salmon and sauteed greens with brown rice - an easy staple meal. Having a few simple but healthy & satisfying meals in your repitoire will definitely serve you when you are sleep deprived. I was not afraid to eat treats - but tried to alternate with popcorn :) I still gained 60 pounds - each time! - but with my youngest now 8 months I am back to pre-pregnancy weight. Breastfeed! Both of my kids love salmon and avocado - my 22 month old eats kale! (I realize this all may change...) But, you sound like a healthy eater already - and your instincts will tell you what you need. I was just looking at the posts about topping toast with cream cheese. Add jam to that...yyum! The first time someone suggested eating a sandwich with cream cheese and jam, I thought they were crazy, but it's actually really good.
*leftover turkey gravy from thanksgiving dinner boiling hot on buttered whole wheat toast
*bacon, tomato and real mayo
*virgina ham and white super sharp cheddar, layered on buttered wheat toast and broiled til melty
*honey roasted peanut butter
*roasted chicken breast (leftover), garden tomato and watercress
*eggs scrambled with half and half, mixed with cooked sausage, tomato, cheddar and topped with white gravy!!!
Good Morning! I just started my day topping my toast with mayo and big thick slices of homegrown beefsteak tomatoes and a little freshly ground sea salt and pepper. Heavenly.
Oops, just checked the Mr. breakfast site...the # is actually at 326...we can beat that, right?
@NativeRose...wow thanks for commenting on my post from almost a year ago! I have never eaten gluten-free bread but the brown-sugar & cinnamon cream cheese really sounds good :)
SE...what's your latest toast topper? Can we beat the 308#...actually I think the # is up to 312?
I have to use gluten-free bread, so I choose the sandwich bread e.g. ener-G, rather than the thick-sliced more dense forms of bread. It's interesting to find enjoyable toppings with that crazy new texture, and I find I need to use more of the topping. So...
tuna fish w/mayonaise/sweet relish
or: tuna w/melted cheddar cheese
Honey, which is almost completely absorbed by the bread, but tastes so yummy
butter and cinnamon/sugar, of course
strawberry cream cheese
brown sugar and cinnamon cream cheese
peanut butter/jelly
butter w/maple syrup is my next try
best eaten with: banana, gluten-free granola (best brand, Udis), gluten-free puffed rice cereal and cornflakes

These burgers are so good, we have eaten them twice in the past week. Once with chevre on kaisers and once with old cheddar on ciabatta. I added chopped onion to the mix as well. Ground turkey is super cheap at my grocery store so I love this healthy, inexpensive dinner! 1/2 a pound of turkey makes 4 burgers. I even keep an extra burger back for the next day's lunch and it is still juicy after reheating in the microwave.
A tip I read about ground turkey is not to treat it like ground beef and mix lightly - you want to pack it as tightly as possible into patties.
