Real Deal Kung Pao Chicken
Half way through step 4, why do you add the peanuts and reserved chicken, chilis, etc to the wok then immediately push them to the side while the garlic ginger mixture is cooked in the center? Why not just cook the garlic ginger mixture with the oil and *then* add the chicken, peanuts, and chilis?
Seriously Asian: Stir-Frying Vegetables
Water spinach is also known as convolvulus, for what it's worth. My favorite is the amaranth. Love that purple color! Any idea why Chinese restaurants serve water spinach and on-choy regularly (both of which I order) but never amaranth? But I agree that the sorting and prepping of Asian greens is a tedious chore. My grandmother used to spend 3 hours every day making dinner. I just don't have that kind of time nor the patience. :(
Restaurant Naming Problems
I am personally really drawn to the names with just a single word. My favorites of all the suggestions are Eats, Hearth (shortened from Hearthside Cafe), and Plate --> simple, to the point, suggests down home comfort food, wallet-friendly menu, and also sounds rather modern. I also liked Comfort Cafe for the alliteration.
I am a Disney Vacation Club owner, and on the discussion boards I belong to, people are always talking about reasonably-priced off-site restaurants near WDW that aren't just another chain restaurant they can find in their hometowns. I understand your desire to cater mostly to local customers, but please don't completely write-off WDW visitors!

Perfect! We just discovered the tiki bar Forbidden Island this weekend and had some decently tasty coconut shrimp there. First Asian Snacks Week and now Tiki Week. I'm in heaven! :D
