For the chefs, I imagine that they probably fix variations on favorite recipes sometimes, while other times trying new dishes that they might eventually prepare in their restaurant. For the staff, I imagine simple, satisfying dishes, preferably ones that are not time consuming or complicated to prepare ... unless they enjoy cooking or plan to be chefs themselves someday
