I work in a restaurant, located on the Las Vegas Strip, (next to MGM, to be more precise). Hope one day to own my own restaurant in Vegas.
I do not think there is any problem to cut the mold off. You can even toast the cheese after that, to make sure there's nothing that will bother you.
