Flagel = Flat Bagel
Flats are regular bagels that have been flattened out, and are generally more expensive because of the extra labor. They're crunchier and have more texture- Best Bagels in Great Neck have the best flats (nobody calls them flagels here), expecially the sunflower one. Highly recommended!
Cook the Book: 'The Modern Baker'
Madeleines were both my biggest failure and my biggest success. In my first attempt, they came out completely flat and waxy. On my second, they came out feather light with the most gorgeous little humps.. I've never been more proud of myself than when I saw those little humps rising :)

Never been to NYC but subscribe to Time Out New York and New York magazine mainly to learn about living there ESPECIALLY the food! It seems to me the vendors at the park in Red Hook would be the first place I'd hit.

I love Laut downtown. Great food and great prices. Plus everyone there is very nice, even when our one friend had a few too many Sake bombs they couldn't have been more welcoming.

I don't know any off the radar places as I only visit NYC 2-3 times per year, but I love Penelope Cafe for breakfast. Great food, and I really enjoyed eating breakfast at the bar.

harriet's kitchen, which seems to have fallen off the radar since shake shack moved in on the uws burger scene.
Flagel = Flat Bagel
I was taking a weekend in Bucks County Pa. When I stumbled upon a Deli named Bagel Junction in Newtown. Their Flagels and traditional Bagels are as good as any in NYC .The lines to the front door were there for a reason and their prices were a relief compared to NY. This place is like home away from home. If your craving NY food this is the place!
