The Food Lab, Drinks Edition: Is Mexican Coke Better?
Love the test Kenji. I have always thought Coke tasted better when served in a cantina in Mexico, with the right amount of Bacardi and a squeeze of lime over ice.
Experience has taught me though, after the third one, I couldn't tell the difference if you mixed in Diet Rite, Pepsi, Tab or even Inca Cola and frankly, I would not even care! Arriba! Keep up the good work.

Great article Kenji. I tried your method last year and the results were as advertised. I passed your method on to a friend who cooks a 6 or 7 rib roast every year for the local fire department and he gets his meat dry aged.
That was an expensive piece of meat to be experimenting with especially when your guests are 6 firemen, but he came out of it singing your praises as I did. As always, I look forward to your articles. Happy Holidays!
Bread Baking: Cinnamon Knots
These look good. Gonna try them this weekend. Anything with cinnamon always catches my eye. Like the others, I was surprised with the addition of instant potatoes.
These look similar to a morning bun I get in Berkeley made by Semifriddis, but theirs is more of a sourdough and is a bit of a chewy treat.

a Trader Joe's Disappointment
Trader Joe's got thier start in Pasadena Ca probably 30 or more years ago. At that time I was in the wholesale food business and I contacted TJ's on a regular basis to unload short coded items. They would buy up anything we had and sell it at a great discount. The selection was always changing based upon what was available to them at the time.
How they have expanded into the specialty type of store that they are now is quite an accomplishment.
They have the best prices around on cheese and thier variety is better than any chain stores.
They are on my shopping rotation also but they only get to see me once a month or so.

Those champagne mangoes are the bomb! They also call them honey mangoes or Philippine mangoes at my market. I think it just depends on which farmer you buy from.

Although I will probably never have an occasion to sample the Spotted Pig's burgers, I do have a favorite out here in SF.
The charbroiled burgers @ Original Joe's in SF seem to be remarkably simaliar to what you have just dissected, minus the roquefort cheese. I have tried to duplicate that experience many times with various results.
The short rib meat might be just the ingredient that was missing.
Lord knows that I could use more fat in my diet. Gonna try it!

What's Your Favorite Ice Cream Flavor
I do like a good mint chocolate chip, or the peppermint candy that comes out limited to the Holidays.
I think it was Breyers that came out with a banana ice cream with fudge swirls and chocolate bits in it that was my immediate favorite, but it disappeared from the freezer never to be seen again in my town.(wah)
How Do You Grill Your Cheese?
All of the mentions of raspberry or other types of jam made me think of my favorite type of grilled cheese sandwich on steroids... the Monte Christo.
I have never made one as good as the ones served to me by a waiter, and the best I have had were served in Las Vegas.
At home, it's sharp cheddar, sour dough, butter on the outside and mayo & mustard on the inside. Nothing to it!
Dinner Tonight: Roasted Asparagus with Poached Eggs and Miso Butter
Looks very good. The suggestion I would make is to lower the oven heat to 350 and just drizzle with the olive oil. I usually roast my asparagus and have found that those settings get the most compliments from my guests. Thanks for the Miso idea.

Easter Dinner Desserts?
I like the chocolate meringue idea with fresh berries and some mint, or of course the trifle or anything else that includes Grand Marnier.
My kind of an after Easter meal crowd pleaser.
Cast Iron help
A good cast iron pan will eventually become blackened and only needs hot water and a brush (not metal) to clean it. After using mine, if need be, I will season it by putting a bit of oil in it, (I use crisco) with a paper towel, then heat it up a bit until melted on all surfaces, then wipe it out and store it.
I will admit that I had a new one that I just couldn't get to season or look like my mothers did, but then I inherited 3 different size ones from her and all is well now. Good luck.
The Secret Ingredient: Pomegranate Molasses
Sounds great! I have had pomegranate molasses on the shopping list for weeks, but haven't found it yet. I want to try it in some sort of chutney recipe to go with lamb or pork.
