Ran out of Mae Ploy this morning, I always use it on my scrambled eggs instead of catsup. Will have to make a run for it this weekend. The recipe looks wonderful and I want to try it out.

What is a good coconut milk substitute?

I have tried several Indian and Thai dishes that had coconut milk in them, it was the coconut smell and flavor that I could not take, basically it started my quest for a substitution. Loved the other elements, just trying to find a way around the coconut milk thing. Since it is such a large part of some dishes, I was hoping someone else shared my coconut milk aversion, and had formulated a solution other than don't partake of these recipes. ;-)

When it is off season outside for growing, I am such a sucker for all the tender things at the store...I end up buying too much and then it spoils before I can use it all. The only up side is that my layer hens love whatever treats I can throw their way, expensive treats they are!!!

I will toy with the different milk/cream/condensed milk suggestions, thanks very much.

I just had a brain drain...would pureed tofu be a good candidate as well? Should have a full mouth feel and be pretty thick...could be thinned if needed?

It is the taste and smell of coconut. Heck, even some of the tanning products with coconut in them make me nauseous...that is so sad.

Aprons: yea or nay?

Apron, you betcha! Full frontal, utilitarian with pockets, butcher/deli style aprons...nothing girlie or cute. The material has to be tough since I use them for both outside grill/smoker/turkey fryer duty as well as normal kitchen work; cotton duck, denim, or the like. June Cleaver I am not...LOL

I just can't do coconut...have tried and tried, just can't take the taste and texture. I have quite a few Asian recipes I want to make, however, coconut milk is a main ingredient. Anyone have any luck with a coconut milk substitute they would share, please? I was thinking of using evaporated milk but was hoping someone had a better idea?
