Cook the Book: Spiced Pumpkin Muffins with Pepitas

I'm going to make these to take on a camping trip next weekend! They look absolutely delicious.

I'm not sure about the ground dates either - where would one find that item?

I want to perfect a recipe for 100% whole wheat bread for my bread maker. Thus far every loaf I've made rises beautifully but then falls just as the baking cycle kicks in. Suggestions welcome!

The blurb mentions "nuggets" of dates, so I'm guessing they're chopped.

Are the dates processed in a food processor? Minced? Diced? Does it matter? I'd mince the dates and see what happens to them. Most date-nut recipes call for soaking the dates in hot water before adding it to the batter, since they tend to be so sticky that they just clump together. I think a recipe should do a better job than this one.
