Cook the Book: Mini Pistachio Tea Cakes

Fantastic recipe! I made my own pistachio paste with approx. 1/3 cup pistachios. I ground them up in my cheapie Kitchen Aid coffee grinder, then added a few teaspoons of water and just a sprinkling of powdered sugar (since I don't like things to be too sweet.) Worked beautifully, and the cakes were a huge hit! I used my regular muffin tin since I don't have a mini-muffin tin, and got about 11.5 little cakes.

These are so intriguing! I'm happy to hear that veggie bacon works out, because I think I'll make a batch to send to my veggie soldier, currently deployed in Iraq. I'd be a little nervous trusting that real bacon would stay good for the 10 days it takes to for the mail to arrive there!

I too have know this particular form of heartbreak--specifically with the Peking duck pizza at California Pizza Kitchen. I've been back since, but it's always such a hollow meal without my beloved Peking duck.

Tips for Choosing Supermarket Coffee

In theory, I'm a coffee snob, but in practice I just want a cup of something hot and caffeinated to get me through the morning. I usually keep a can of "emergency" coffee in the freezer, for when I run out of the fresh roasted stuff and am too lazy or busy to run out and get more before the next day. We don't have a drip machine, just a cheerful little yellow espresso maker, and as far as supermarket espresso goes, I really like Medaglia D'Oro.

I just made them and the flavor is phenomenal. But mine came out cakey too. I am definitely going to make them again and I think I'll squish them down a little, like peanut butter cookies.

They didn't spread out at all so maybe more butter?

Any other suggestions?

I think these sound perfectly intriguing!
My Mom is in her eighties and has been cooking with bacon grease for her whole life. She even bakes cookies on a pan which has been greased with it! Not only that, she has never refrigerated the grease. So for that reason alone, Licoricewhip, I'm sure your cookied bacon bits in the cookies would be fine for 10 days on the way to Iraq - and once there, to boot! :o)

Thanks everyone!! I shared some of the doubt expressed in other comments, but after I came across the recipe I just couldn't get it out of my head.

Also, as an added note, I did freeze some, and they freeze well--but I should say that the salty-bacon flavor did develop more in the ones that were frozen and then thawed, so if you like a stronger savory-salty flavor, you might like to allow them to "age" a bit.

I take my coffee very seriously. have more than 3 cups a day !!

Lately I have been drinking this really great organic blend - it has a bright bold flavor.. I found it at whole foods in fresno But I have not been able to find it here in LA. I order it online and it arrive fresh to my apt.
