I have to say that I agree on the Martha White as far as mixes go. I'm form the South and Cornbread is not supposed to be sweet or freakishly yellow... especially if you are using it to make dressing.

Here are my very favorites:

Tilth - tiny Maria Hines puts out big, beautiful locally grown food and local wines.

Union - Ethan Stowell was nominated for a JBA this year and his food is genius.

Herbfarm - Jerry Traunfeld's beautiful place and beautiful food.

Sambar has the best cocktails, and Sun Liquor is one of my favorite places to hang out with friends and drink.

And don't forget Top Pot doughnuts - yummy!

Man, there's some serious hatin' going on here. I personally think the idea of deep-fried mac and cheese is astoundingly awesome. I am all about the occasional over the top snacking. And yeah, her expression 14 seconds in says it all.

has anyone noticed how much thinner Paula looks lately? Maybe she finally has to watch her fat intake! I for one won't be eating fried lasagna, deep fried mac&cheese, fried butter balls or any of her other heart stopping recipes but she is a fun lady to watch and an animal lover. I just hope she doesn't feed this food to her dogs, it might be considered animal cruelity.

Dinner Tonight: Marinated Tomatoes with Linguine

I like cooking my tomatoes (preferably Roma) with the skins left on for better nutrition and fiber content. They cook out so that you can eat the sauces and you won't notice the skins.

Often, I buy my tomatoes out of the produce section that have been set aside by the market for quick clearance. These are usually tomatoes that are becoming too ripe to handle much fondling by customers and are perfect for sauces...the riper, the better!

Also, you can add other items to suit the dish and/or your taste, such as fresh mushrooms, diced bell peppers, oregano, and dashes of red wine.

After cooking for a more consistent sauce, puree your finished product. When cooking foods such as this, stews, soups, stroganoff, chili beans, I simply put it in the frig for a couple of days and let it sit....it allows the flavors to blend and I think, makes a better dish to serve.

These sauces are great and have super versitility.....They can be used for numerous dishes. Many great suggestions so far. I like using them as a base for stuffed bell peppers with brown rice, stuffed tomatoes, pastas, and other dishes.

Lastly, they freeze very well!!

@piccola, you are so right, sorry, we lose our way sometimes. As far as mixes go, it's Jiffy all the way. My first MIL was (is) as southern as they come and she wouldn't use anything else. Still the very sweetest woman I know.
Instead of milk I use buttermilk and I add just a little bit more. I also add a teeny bit of sugar. I like it sweet.

@BostonBeans, First of all; Boston? My husband is from there, what do you know about Real Southern Cornbread?
Second of all, you're right.
BUT, sweetness is a matter of taste. For the table I like it sweeet (not a typo), but for stuffing no sugar.
Always buttermilk.
Always shortening or lard, not oil.
Not butter, it's not biscuits. (Which, BTW, would be 1/2 shortening 1/2 butter)

Mixed Review: Thanksgiving Cornbread

May I respectfully suggest making Real Southern Cornbread? No white flour, no sugar. Stone ground cornmeal, an egg, some fat, baking powder and soda and any kind of buttermilk.

This is delicious--the recipe is over 200 years old. Our foremother made it daily. You will need an overproof cast iron skillet. Any old Southern Cookbook should have it.

Google "real southern cornbread" for starters. You can bake it a day or two ahead for stuffing. It's great with chili or stew--hearty food and you'll come to love the lack of sugar. Eeeww! Who wants sweet stuffing in a bird?

Mixed Review: Thanksgiving Cornbread

Jiffy's is good...and I'm sure cheaper than my favorite, but it just wouldn't be right if I didn't send a shot out to Marie Calendar's cornbread mix. It's sweet and the crumbs stick together, instead of crumbling away like Jiffy. It brings back memories of eating nothing but cornbread and chili when my family would go to Marie Calendar's when I was a kid. The honey tastes like it already has honey in it...no other toppings are needed but a little butter!

Best Fried Chicken in NYC?

The best is at a new place that's not on your radar yet but should be: the redhead at 349 E. 13th Street (just west of 1st Ave.) Meg's fried chicken is amazing - crisp, greaseless, delicious.
