Winner Winner Chicken Dinner: What's your favorite chx. dinner?

I actually have a recipe (a word of mouth type passed down from a friend) that's actually called "Chicken Dinner". It involves coating cut up pieces of boneless chicken in egg wash and bread crumbs and browning them in olive oil. Once cooked, you place the chicken pieces in a casserole dish, add about 3/4c chicken broth, a splash of white wine and bake for 30min. Add some cheese to the top and bake for 5 more minutes. My family likes it served with rice, green beans, and lots of Crystal hot sauce.
When ever I ask my husband what he wants for dinner, he always requests this. Other friends have raved about it as well.
Honestly it's pure comfort food. Our chicken dinner is definitely a winner!

Sprinkles, Shots or Jimmies?

I'm from CT and I have always called them shots....as in " I'll have a frosted donuts w/ shots". Sometimes its Jimmies (usually when its on ice cream). Never sprinkles.

I know I should give up _____ (food/drink item), but....

strawberries dipped in chocolate....I know its not that bad b/c its fruit, right? The problem is that I get on this kick where I have to eat them. So, I'll buy a container or two of berries and that will last, uh, maybe two days. Then I'll buy more strawberries and more chocolate and this will go on for a few weeks.
Its bad when my husband says, " well at least I know what to give you for your last meal on earth"

what food do you miss from childhood ?

I hate anything apple flavored but I loved apple fruit roll-ups! They also had apricot ones which were equally delicious.

I have to say one of my favorite childhood treats was a peanut butter and fluff sandwich. No marshmallow cream...but real Fluff. My grandmother would make then for me and cut it in to quarters. Why does a sandwich taste different when its cut that way? I still indulge in one today when I'm feeling nostalgic.

I also loved the Life Saver swirl lollipops. The strawberry and cream ones were divine. I haven't seen those around in years.

Anyone cooking up Mardi Gras?

I hosted a Mardi Gras party last night here in Indiana (my husband and I recently moved from New Orleans). I cooked up some red beans and rice, shrimp po'boys and a dear friend sent us a king cake. I also made some pecan lace cookies.
Frozen hurricanes and Abita Amber, special ordered from our local liquor store, kept everyone happy!

A great idea for rimming a glass is using the pop rocks.....tastes delicious on a flavored martini or cosmo and is always a conversation piece. I know its not something you will make but might be fun to add to the cocktail party

Mixed Review: Betty Crocker's Oatmeal Caramel Bars

@beccaMJ- My family's most cherished cookie bar recipe is for Oatmeal Camelitas! People ask for them on their birthdays rather than cake. These bars look very similar to that recipe. You could definitely use dessert topping (caramel or dulce de leche) and just add flour to thicken. I'm craving them after reading this!

New Orleans - Don't Know Where To Start!

I recently moved from the city and can recommend a few places. I lived uptown so most of my pics are around that area.
1. Jacque' Imos is one of my most favorite places. I have never had a bad meal here and the atmosphere is one of a kind. The smothered cabbage and corn maque'choux are two great side dishes and all the entrees are delicious. The owner also runs a small lunch place near river ridge called Crabby Jacks...awesome po'boys and great lunch specials for cheap.
2. Clancy's- an uptown favorite. Great dining all around
3. Brightson's- another great restaurant uptown and the chef is so personable. I took a cooking class from him and learned a lot.
4. Superior grill- decent mexican food, but go for their frozen margarita. Order one and then take it on the street car as you sight see
5. Panola's cafe- a small uptown breakfast place. My husband and I went there almost every weekend for breakfast. The food is nothing spectacular, except the biscuits but it is always consistent with good service and a good atmosphere.
6. Rio Mar- awesome seafood and a neat little location. The chef owns other restaurants in the city including an Argentinian steak place.
7. Domilicies- is a po'boy place....simple and delicious.
8. Cafe du Monde- its a touristy thing but one of a kind. Here's a little tip...you don't have to wait to be seated but people always form a line. Find an open seat and sit down.
9. Commanders- I know people have wavering opinions of this restaurant but I have always received stellar service and amazing food here. Its a New Orleans landmark. If you plan on going, make a reservation ahead of time.
10. Port of Call- Hands down the best burger you will ever eat and the baked potato is to die for. Eating there was our Sunday night tradition.
11. Gallatoires- Another New Orleans landmark. A great place to eat and get a sense of the New Orleans scene. There is a dress code- jacket required.
12. The Columns- go here, sit on the porch and have a cocktail and watch the street cars roll by. A must.

You'll have to re-post when you return from your trip and tell us all where you ate.

Honestly...I could go on and on. Have a great trip and eat well!

What's the strangest thing you have had/crave for breakfast?

@pielady....you read my mind. There is nothing I would rather have for breakfast than a slice of pie- preferably cherry or blueberry. I heat it in the microwave for a few seconds and wash it down with a big glass of milk. Perfection!

Uncommon food allergies that nobody believes?

My husband is allergic to mango...not the actual flesh but the leaves and sap. He found this out when we were living in Hawaii and had a giant mango tree in our back yard. The doc told us mango is in the same family of plants as poison ivy and many people are allergic...go figure.
I also knew a woman allergic to cilantro and related foliage like celery/carrot leaves. If she ate any thing with cilantro she would get hives and begin wheezing.

Uncommon food allergies that nobody believes?

I am allergic to raw mushrooms, can't eat anything that has been cross contaminated with it. I ate some fresh veggies that had a few flecks of mushroom in it that I didn’t see and within 5 minutes it had triggered my asthma, my mouth swelled up and the lips, tongue and all the rest of the symptoms that go with it. I can eat them when they are cooked though and I now love canned mushroom, since I can’t eat the raw thing anymore. I can’t even handle raw ones (my husband hates mushrooms) so I can’t eat them freshly cooked unless I go out.

I have found that since I have given birth to my twins 3 years ago that my allergies and asthma have gotten exponentially worse. I can’t even be in the same room with cats, dogs, any animal with hair. My allergies to the great outdoors have had the same consequence. I also have developed an allergy to Celery, I have the same reactions as I have to mushrooms but I stopped eating it, so I haven’t found out if it gets worse with every exposure.

My main concern right now is that I have a reaction when I eat in combination tomatoes and bread. I can eat bread alone and tomatoes but when they are eaten in the same meal I get an overwhelming reaction to throw up. It can be as mild as a slight queasiness or I can start to throw up. I have looked and looked but I can’t find anything anywhere that mentions allergies when foods are combined. Since the birth of my twins the tomato and bread reaction has gotten worse as well. I have never cared for pizza because it always left me feeling sick afterwards which I just thought that it was the grease in it.

I feel like an idiot when I say anything about the t&b thing....I know it is not in my head but nobody has heard of it and people just think I am being picky. Since I was about 13 apples have made me feel the same way. Sometimes the reaction is worse than other so I will every once and a while eat a bit of an apple but never a whole one. The T&B reaction is worse than the apple one though because my mildest reaction to T&B is the worst I have had to apples.

Pumpkin -- for pumpkin pie!
Whole kernel corn -- in my college days, I'd nuke a bowl of this in the microwave with some butter, mmm.
Canned crushed tomatoes -- wonderful for making pomodoro sauce.
Tomato paste -- 'nuff said.
Tuna -- it was good, but after a series of my mother-in-law's attempts at 'convenience dinner after work', I just lost the taste for tuna salad completely.
Garbanzo beans -- for hummus.
Coconut milk -- for Thai curries.
Evaporated milk -- I know a woman who uses this in her oatmeal, no joke.
Anchovies -- pastas, pizzas, flatbreads, butters.
Chinese preserved vegetables -- my mother uses this with a braised pork belly and lotus root dish, but I have yet to get the recipe from her.

I do use fresh pumpkin for pies and soups I chop it and roast it in the oven, then peel the skin off and rice, not puree. It does make for a very different pie custard texture than standard, but we enjoy it. And the Thunderstick takes care of texture when finishing the soup.

However, if Hubbard squash is recommended, I'll look for some fresh and give that a try. Thanks for mentioning it.

Not only that, but most of what is sold as "canned pumpkin" is actually Hubbard squash - which is magnificent for pies, it's true. Or even soup.

Canned green beans are only fit for three-bean salad, the only context in which fresh or frozen just don't taste right!

All canned tomato products, however, are acceptable in any dish that calls for cooked (or cooking) tomatoes.

Canned olives are all right if you can't get the good Greek style. Unfortunately, I can eat a whole can by myself.

Canned beans are always welcome in our house, though home-cooked-from-dry always taste better (and so easy in the crockpot or solar oven).

Canned coconut milk is one of the cheapest luxuries I know.

Sardines and Kipper Snacks – in fact, any kind of canned fish except salmon. If you're not worried about mercury. (I'm reluctant even to eat fresh fish any more :(

I also agree with Pavlov about any kind of home-canned fruit. Haven't had any since my grandmother was still cooking for her family. I really need to keep in touch with the local gleaning group and see if I can score some fruit to can, before the summer's over.

Most beans (pigeon, black, kidney, pinto, etc...) Artichoke hearts, cause damn! Who wants to go through all the trouble of prepping those. Not me anyway. I know this probably isn't what was in mind by canned, but home picked and canned blueberries in midwinter on some nice french vanilla Ice cream..... Tastes just like summer!

Progresso's

I will be frank and admit this is comparing apples to oranges. The only Campbell's brand of wedding soup I have tried is the traditional red and white label condensed soup, whereas the Progresso is heat-and-serve. So if any of Campbell's non-condensed brands is what you are talking about, you will have to make the comparison for yourself.

But, I love the spinach, pasta, and meatballs in the Progresso version.

-Smoked fishes (yes, various as per marvindog. I love smoked mussels, smoked oysters, sardines and I love jarred pickled herring *drewl*)
-Peaches (topped with fresh cream)

PREPARED FROM CAN:
- Beeferoni (thank heavens for Chef boyardee!)
- Campbells herb and wild rice/chicken soup
- Habitat Pea Soup (I like to add extra ham to mine and fresh herbage)
- Im ashamed to say I like canned cream spinach :p

...other than that you'd really have to pay me to eat from the can :p

@pooch: what's your can brand of puppy chow? I just wanted to attempt to sway you AWAY from Iams as a brand. Poor corporate and humanity values

I prefer to cook and flavor my own dry beans, but I do keep cans of beans I can't easily find dried, like gunga peas. Same goes for water chestnuts (awesome in spinach dip). As for canned meals, my not-guilty pleasures are the canned garbanzo and lentil dishes from Jyoti foods. I can eat that stuff out of the can. Mmm. When's lunch?

I don't not like canned foods, but I also don't eat many. The exception, however, is that am absolutely obsessed with canned Del Monte Cut Green Beans. Not Fancy Cut, not French Cut, not low sodium, just plain Del Monte Cut Green Beans. Typically, I open a can, pour them into a wide, shallow soup bowl, and eat them one by one like chips.

@jay27: I wish I could do sauerkraut from a can, it is so much cheaper than the bagged sauerkraut generally. But I find it gets a really strong tannin taste, or something. Bagged sauerkraut is awesome though.
