Can you guys do this but for beef ribs? Blue Smoke and Hill Country are two awesome places to start.

I've never had them on pizza, but whenever I get a sandwich from Subway they are always on there, :-).

Having grown up in Argentina, here are my two favorites:

- provoleta: an inch-thick slab of provolone cheese that's thrown on a super-hot grill and charred on both sides, leaving the insides soft and gooey. It's then liberally covered in oregano, and sometimes served with things like fire-roasted red peppers or ham on top.

- fugazzeta: it's a kind of white pizza pie with nothing but cheese, caramelized onions, and oregano. Like provoleta, it's sometimes served with ham on top, but it's not needed, :-).

If I could only pick one, however, it would be provoleta.

Ah, then I got 3 of 4 (I guessed the Brooklyn Children's Museum for #1).
