Poulet's One-Pot Coconut Chicken over Jasmine Rice

Just made this tonight. Fantastic. I could probably cut back on the ginger by half. Yes, 15 minutes is very optimistic, it took me 25-30 and I've got some knife skills. I added sweet potatoes and 2x the fish sauce. It took about 10 minutes longer for my chicken to cook as well. It was worth all the prep though - lots of great leftovers!

I tried making the Apple Sangria with the applesauce. AMAZING. The texture is really interesting. You'd never think applesauce would make it taste so good! It's nice too because you don't need any extras like Triple Sec or Brandy - just red wine. Thanks SE for a great recipe! (Also, next time I'm trying it with sparkling water instead of pop and I used a whole bottle of wine with the same amount of sugar and it was plenty sweet.)

I LOVE my quarry tiles for pizza and bread baking. My oven will actually get up to around 650, according to my hanging oven thermometer. The crust gets nice and crisp. Near the end of baking, I turn the broiler on high to get some browning on top. I had to get my tiles from a local specialty tile installer, though. Lowe's and Home Depot didn't carry them in my area.
