Have you tried Anthony David's in Hoboken? The food there is great. Also, there is a place in Teaneck (about 15 min drive) called Bistro-En which is an asian-french bistro with great sushi and bistro dishes. Ox is on my list as well.

Who knew there were so many Hobokenites on SE?
I used to eat at Charrito's, La Isla, and Zack's with some regularity, but Zack's switched chefs and went totally downhill and I got tired of all of the food at Charrito's tasting basically the same, and La Isla, well, La Isla is still pretty great if you're in the mood for it.
Margherita's is also pretty fantastic.
There are still many restaurants I haven't tried in Hoboken and I was hoping there were some hidden gems out there that I don't know about, but it doesn't sound like it. Interesting idea to try JC (will have to check out Ox!); I always just go to the city for eating out when I'm too lazy or I'm too tired of the places in town.

Cakespy: I love Carlo's bakery so much! Their M&M cookies are to die for, and the cakes are just out of this world!

La Isla is pretty great, and the Mongolian place on S1st is good too. I also love Di Palma in n bergen.

If you're looking for Chinese, Grand Sichuan which has several doors in Manhattan is opening this week in JC near the Grove St. station I believe. I used to go to the one in Hell's Kitchen where they offered up some really good food with a touch of shady service. GS tends to really offer just Sichuan style though. Still hoping to see a good Hong Kong style noodle shop around here.

There's also a good Vietnamese place on Newark Ave. called Nah Trang Palace. It's not at all fancy but it's pretty damn good.

If you've got a car take a look at Jason Perlow's blog http://offthebroiler.wordpress.com/. He's one of the founders of egullet.com and covers a variety of places in the area.

Ibby's was renovated quite recently so you can definitely eat-in.

2 votes for Ibby's falafel! Its near the Grove PATH station... been 10 years since Ive lived there. Things have changes a lot since then, I hear. Knowing Ibby's is still open, I highly recommend their falafel and baklava. Their falafel as I remember is super yummy albeit a little small in size compared to other falafel joints Ive been to. That being said, their price is also lower than most places. You can sit down in there, but I always felt as if it were more of a take out place. I liked their falafel offerings much better than Mahmoud's (I THINK thats the name) in the NYC West Village, a place that the kids rave about constantly. Jersey City is a TRULY diverse and wonderful city that one can find almost any type of regional food in. Go there. Thanks "Bar Majestic"....I'll taking the PATH over to Grove street to see the old 'hood and get an Ibby's falafel real soon!

Oh and I failed to mention that there is a Little India in Jersey City. I have only had takeout from Rasoi which has been decent but another wonderful place was reviewed by the Voice and highlighted on Serious Eats I believe.

I agree, I couldn't be more disappointed by the restaurants in Hoboken.
In Hoboken, Anthony Davids is wonderful as is Cucharamama

Jersey City: I agree with Lighthorse Tavern, Marco and Pepe and Saigon Cafe is fantastic (and cheap!).
Try La Gloria de Mexico on Palisades in Union City for incredibly authentic Mexican - note it's BYOB.
For North Bergen - there are many options, Tapas de Espana is excellent with a killer sangria by the glass (not as good for the pitcher), as are Di Palma Brothers and Trattoria Sorrentina.
