Poll: How Do You Top Your Pancakes?
As soon as they come off the griddle at home, I sandwich semisweet chocolate chips between them and more on top. Then wait a minute or so until they melt. Yummy!

I'll echo the above....take me with you! I studied in Seville in the south of Spain, but never went to Valencia.
The 2 things I miss the most are the jamón and the chocolate con churros. The hot chocolate is AMAZING, basically a melted chocolate bar in a cup.
See if you can find a Spanish mother and/or grandmother to make you a tortilla española....the ones my homestay mom made were so amazing and way better than any of the ones I got at restaurants/bars.
